2vegetable bouillon cubes, crumbled

5 cups (1200 mL)water

1 cup (240 mL)soy cooking cream

18 oz (500 g)uncooked vegan gnocchi

2 cups (60 g)fresh spinach, chopped

1 cup (138 g)frozen green peas

½lemon, juiced

Directions
- Add oil to a large pot on medium-high heat. When hot, add the garlic, celery, onion, and carrot. Cook for 3 - 5 minutes, until golden.
- Add the flour and cook for 2 minutes, stirring throughout to toast.
- Add the bouillon cubes, water, cream, nutritional yeast, spice mix, and miso. Cook at a gentle simmer, partially covered, for 10 minutes.
- When the veggies have cooked to your liking, add the gnocchi, spinach, and green peas. Cook for 3 - 4 minutes, or until the gnocchi and peas are cooked.
- Serve in bowls, add some fresh lemon juice, garnish as desired, and enjoy!

Storage
- Store in an airtight container in the fridge for up to 3 days.
- Freeze for up to 2 months.
