When we can't find a spice mix at our local grocery store, we try seeing if we can make it ourselves at home! Za'atar spice mix is a flavourful Middle Eastern and Mediterranean seasoning that we use in all sorts of ways. We mix it into our homemade salad dressing, into tofu or tempeh marinades, sprinkle it over roasting veggies, and add it to recipes such as homemade falafels to pack it full of flavour.

Ingredients

  • 2 Tbsp (5 g)
    dried thyme
  • 2 Tbsp (6 g)
    dried oregano
  • 2 Tbsp (12 g)
    ground cumin
  • 2 Tbsp (11 g)
    ground coriander
  • 2 Tbsp (18 g)
    toasted sesame seeds
  • 2 Tbsp (16 g)
    ground sumac
  • 1 tsp (6 g)
    salt
  • 1 tsp (2 g)
    chili flakes
  • 1 tsp (2 g)
    ground black pepper

Directions

  1. Add all the spices into a small jar, mix, and you're good to go!

Storage

  • Keep in a sealed glass jar away from direct sunlight for months, just like regular spices.

I couldn’t find sumac so I subbed lemon zest instead. So easy with mostly pantry staples but adds so much to dishes. Yum!

The combination of the spices is quite amazing. You open the jar and it smells like the Middle East! I added it to a roasted veggie spread I make regularly and it just effortlessly made it exotic and ... just perfect!

What substitute can I use for sumac? I can't find that spice in my country.

Great question, Tanja! It may be in an international foods aisle or store, or perhaps online. Lemon pepper seasoning or a dash of lemon zest may help provide the tartness that sumac provides though! Alternatively, you could try omitting it from the recipe and adding some lemon juice when cooking 😀
