2 Tbsp (10 g)unsweetened coconut flakes (optional)
Make your own
Directions
- Add the ground flaxseeds and water to a small bowl. Mix and sit aside.
- Line or lightly grease a 9 x 13 inch (18 x 27 cm) baking dish. Preheat the oven to 350°F (180°C)*.
- Add the hazelnuts, oats, cinnamon, and salt to a food processor. Blend into a flour.
- Transfer to a large bowl and add the remaining whole oats to the bowl as well.
- Add the dates to the now-empty food processor. Blend until a paste is formed.
- Then add the almond butter, coconut oil, vanilla extract, and gelled flaxseeds. Blend until well combined.
- Transfer the sticky mixture from the food processor into the large bowl with the dry ingredients. Add the cranberries, pumpkin seeds, pecans, and chocolate to the bowl as well. Mix well.
- Transfer the mixture to the baking dish, and press down firmly to smooth out the top. If desired, press on any of the optional toppings, like coconut flakes or more nuts or dried fruit.
- Bake on the centre rack of the oven until lightly golden, about 14 - 17 minutes. Let cool completely before cutting into bars. Enjoy!
Notes
- †Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.
- * We used top and bottom heating (not fan-assisted/convection).
- The granola bars are rather dense. We found that they're a nice compliment to enjoy with something creamy, like crumbled onto some plant-based yogurt or a smoothie.
Storage
- Store in an airtight container in the fridge for up to 1 week.
- Store in the freezer for up to 1 month.

These were great! I used 1 tbsp of psyllium husk instead of one of the tbsp of flax seed. I also added some water to the mixture. They turned out perfect and not too crumbly :)

This is the first recipe I’ve tried from PUL, but previously, I had fallen in love with your presence in the foodie community. Taking the first bite of this balanced, chewy, and delicious bar has only furthered that. This will truly get me out of bed every morning and leaves me feeling so revived and healthy yet luxurious (the chocolate is a must in my opinion)! I did use walnuts instead of hazelnuts and added a banana after reading reviews where people said it was crumbly. Thank you so much for making this recipe, it has become the highlight of my day! 🌿🙌🏻

Made these to help my little guy gain some weight and he's actually eating them. Mine are only a bit crumbly but tastes good. It probably only crumbles because I changed stuff. I used cashews instead of hazelnuts, vanilla almond butter with a touch of peanut butter. For the toppings I did dried apricots, pistachios, chocolate chips and pumpkin seeds. It probably would have been way better with cranberries and regular almond butter. But I thought I had more stuff than I actually did 😅 I will be making them again. I'll update you guys when I do.

What can I use instead of a food processor to make the flour and paste?
I used peanuts instead of hazelnuts and bananas instead of dates. The bananas held the shape well. Instead of dried fruits, i used candied fruits and instead of sunflower seeds, i used sesame seeds. As i changed a lot of the recipe, i cannot speak about the original flavor, but my version tasted okay to good and is a very good breakfast - make you fell good.
Hi Sadia! I would love to make these for a friend, but she has a sorbitol intolerance. Is there a way to substitute the dates with any other sticky ingredient? Would love to hear your thoughts!
Really enjoy the hazelnut base for this, super tasty and a bit different to what I'd normally have. This was my first time baking and did find them quite crumbly - ended up with bars which I put in the freezer but also extra granola which I've added to yogurt. Will look at adjusting the mixture a bit before baking next time to help it stick.

I’ve made these loads, although I use dried cherries instead of cranberries and quite a lot more chocolate... I crumble them over some yogurt and berries. Delicious!

These were delicious however unfortunately I didn't manage to have them as bars, they crumbled completely so I rebaled them for a bit and had them as granola which was delicious

Very messy to make but quite tasty. Although I think I’ll ONLY make them as hiking energy food because these have totally made me LESS regular, not more. All those date stopped me up 😅🤣

Didn't have pecans and haselnuts, so I just replaced them with walnuts and almonds respectively. Work out great and they take amazing! One more thing added to our list of healthy snacks!

tried this recipe and let me tell you that it was amazing! I swapped pumpkin seeds with sunflower seeds and made a chia egg instead of a flaxegg and it was an absolutely earthy, rich, healthy and nutricious treat. I'll make it again for sure! It reminded me of the flapjacks but more healthy and packed with flavours.

These definitely did not disappoint! I usually make the frozen yogurt breakfast bars but i decided to switch it up this time and i’m glad i did. I kept the recipe the same but i decided to add a handful of frozen berries to the food processor with the mixture and that turned out great. Highly recommend these!!
These are sooo good! I don’t eat plant yogurt very often, but when I do, it always makes me want these bars! They are the perfect accompaniment to the creaminess of the yogurt, and have such a satisfying feel when you bite into their denseness. Crumbled into cashew yogurt with some blueberries makes for a lasting breakfast (or snack). I usually skip the chocolate, but I’m sure that would also be yummy.

I really struggle with low energy levels throughout the day and i got this recipe from the video describing how your food affects your energy. I love how many servings this recipe makes. We've been eating these in the afternoon to curb our afternoon slump. I'm not sure if it's the placebo affect or if they're actually working, but I've been feeling great after I eat one! I will definitely make these again!
Whenever I want to treat myself to a special breakfast I buy hazelnuts and make this recipe. The nutty flavor of the hazelnuts together with all the other ingredients is just a perfect combination.

I swapped the hazelnuts for almonds, the pecans for walnuts, as well as the almond butter for peanut Butter. And I left out the pumpkin seeds.
They turned out soo delicious but maybe a little bit dry. I had them for lunch with yoghurt and frozen raspberries. Such a heavenly combination!

Personally, I would not have these for breakfast due to the coconut oil making them a "less healthy" choice with its high saturated fat content. Is there anything you can sub the coconut oil for?

I have hazelnuts without a 'shell', could I use those? And would they still need to be baked in the oven?

This is so delicious! I subbed raisins for dates as I didn’t have any dates at the moment. And I also didn’t have hazelnuts so I put 1/2 cup of almond flour. And 1/4 cup avocado oil instead of coconut oil. And they turned out fantastic! Seriously, my 2.5 yr old, my husband and I ate one each immediately! So yum. Thanks!

This granola version is tasty and satisfying for all ages ( 3yo daughter and 33yo hubby), while easy for me to make ahead. A win for all family ☺️
Favourite with my teenage son to fill him with energy, always have some on in the freezer for a snack. We swap out the flax for chai which is easier to get here and swap pecan for walnuts as a personal preference.
Ooh these are my absolute favourite! Have them as a snack, break them into little pieces to enjoy as a topping on my smoothie or nicecream… or share them with other people who always love them too!
Delicious bars! Very filling and tasty. I like to cut mine out of the oven in 14 bars and then I have breakfast for a week for 2 people, if we don't snack on them, which is hard ;p. I notice my nutbutter is not as liquid and I don't use soft dates but dates from the baking department, so the mixture is a bit dryer, but is works out great anyway!
These are really delicious and worth the time and effort. They are extremely filling, too. Just one recommendation - don't forget the prepared flax eggs! I ALWAYS forget them initially and wonder why on earth the mixture is so difficult to work with, then look over and see my little dish of the flax eggs waiting for me. If you're short on time and don't really feel like you're going to miss the hazelnut flavor, I also recommend just subbing in approximately 2 cups of almond flour for the 1 cup of whole hazelnuts (that you process into a flour). Add in chopped roasted hazelnuts with the chopped pecans to get the hazelnut flavor back.
Hello! I just made these bars and they are very nice super-rich and healthy snacks. Thank you so much for the recipe. One thing is only that 12 bars seem a bit too much for me. If I freeze them, what do I do after? Should I just leave them to melt at room temperature?
I made these bars for a backpacking trip to have for my breakfast and they were perfect! I love that they aren't too sweet and make for a hearty morning meal (I had 2-3) before we started hiking. I've also enjoyed taking these to work as they make for a more substantial granola bar.
These were quite good, although I preferred the orange zest recipe! I think the best part about these kind of bars is that they keep in the fridge for months and so you make them once and have a snack whenever you want!
Make these! I had to swap out the dates for prunes, abs use peanut butter instead of almond butter, and almonds instead of hazelnuts. And no pecans. It was great! Prepackaged granola has too much sugar and the store brands are worse.
I plan to make two new batches, one with cashew butter, and no almonds. For a friend because of allergies and one I’m gonna bake thinner. Trying to get my toddler to eat them. She is always eating my granola bars, abs I want her to consume this one. I think she was put off by the thickness. I’ll let you know how that turns out.

The combination of nuts and almonds in various textures with dark chocolate is brilliant!!!
It’s dense without being heavy, which makes it a sufficient afternoon snack in its own right. In accordance with its name, I’ve really discovered how well the bars work as crumbled granola. My favourite combo so far is canned peaches, coconut yoghurt, and one crumbled hazelnut bar😋
