This lasagna is delicious and a lot easier to make than I expected. I scaled the recipe up to ten servings and it was not more work than making six servings.

I tried this today and it turned out delicious! It seems like such an unusual combination of flavours but it really works. I topped it with some homemade mozzarella from "The Happy Pear". I will definitely make this one again (I might even prefer it over the more classic lasagna flavours).

I was a bit reluctant to try this due to the timings but it ended up feeling really quick. I made the two sauces at breakfast before we went out for the day and when we ho home it just meant that I had to go from the step of frying the onions. It was in the oven a short time later and I was able to carry on with my evening.
I think this is a perfect dish to make ahead of time for guests. We really enjoyed the flavours. I found it very 'cheesy' so I am going to experiment with the cheese type on top and perhaps make my own. I may also cut down the apple cider vinegar a tad to reduce a bit of acidity.

A little tip from me: just make the yoghurt sauce (or tomato sauce) with pasta. Less time and super tasty! :)

Very nice! It took some time to make it but this was definitely worth it. We swapped the lentils for veggie ground. Beforehand we were a bit unsure about the artichokes since we never use them so I chopped it a little more compared to the pictures but it was a really good flavor combination. We will definitely make this lasagne again!

When assembling the lasagna I was not so sure about the flavors (it seemed a bit bland), but when it all came together it was delicious and wholesome and flavorful. Definitely one to repeat.
