Omg! This is so simple and satisfying! I’m not a vegetarian. I subscribed to PUL mainly because of the pretty presentation. Lol. But now!!!! Recipe comment: I needed the soup to have a little sweetness and acidity. Was gonna sprinkle in some sugar and vinegar, but opted for a tomato instead (I don’t really know how to cook. Sorry if this sounds gross to anyone! Lol). I don’t have Bay leaf either, so I drop in fresh basil. Turns out really yummy!!
This was so simple to put together. I used a coarse grain dijion mustard; the taste was so comforting! I had the soup with some crusty bread with olives and felt like I was at a café for lunch. Great recipe!
A nice simple leek and potato soup, was perfect for lunch on a cold day, very tasty and easy to make :)

J'ai été déçu. C'est la soupe d'hiver classique, très peu de goût voir déprimante. J'ai ajouté une cuillère à soupe de moutarde par assiette de soupe pour que cela sorte de l'ordinaire. Par contre les croûtons sont délicieux. Ils ont donné un peu de personnalité à la soupe.

I needed to use up some leeks and this recipe was perfect! Next time I will add some form of protein as well. But it tasted amazing 🤗
This was the first time I’ve ever liked leeks, and the family loved it. We’ll definitely have this again.
I was really curious about the mustard in a soup. I used Moutarde à l’ancienne instead of Dijon and it was so good I made more of it the next day! I love this soup. Thank you PUL team

Just made an ate this soup, it is simply divine! So much flavor everything just compliments each other. I have absolutely never had anything go wrong with one of Pick Up Limes recipes! They are the absolute best even if you aren’t plant-based or vegan you can make these recipes and add your ownstuff, which is what my daughter does lol I did end up adding asparagus and green peas for protein.
This was so warming and creamy. Perfect for a winters day.
I always have to double up on your soup recipes because my family just can’t get enough! So warm, creamy and filling, and the Dijon mustard gives it a nice kick!

I'm not vegan, but I have always loved watching PUL throughout the years. I've been slowly transitioning to more plant based menus. I added cream of mushroom and didn't have djion mustard, so I used normal mustard instead. Was absolutely delicious still.

Delicious. I had some really strong Dijon mustard, so I used only two spoons, and it was more than enough, so you might be a bit careful with this ingredient. Other than that, no notes.

Made this last night,perfect for a freezing December night! I was a bit sceptical about the mustard, but really enjoyed it. I think this might become my new go-to potato soup. Only change I made was to add a medium finely grated potato after I pureed the soup and let everything come to a boil for a couple minutes again. It's something my mum taught me and I always do this for potato soup. Those tiny potato shreds/"noodles" have a really interesting texture and make the soup so much fun to eat! Thanks for another great simple recipe!

Oh my! So delicious! We usually enjoy a recipe with herb de provence, so this was a delicious change. I made this because we really like dijon mustard. I added spinach at the end.
I enjoyed this soup but I think I would use less mustard in future attempts.
Be ware not to add too much mustard after you read “more to taste” 😂

Just made it - first recipe! Came out really good. Fantastic when served with olive oil. I also had celery to use up. Next time, I'd bulk up with some protein, maybe butter beans or tofu like suggested below.
This was deeelicious😍 I blended half of the batch to a purée and kept the rest as it was for some ~texture variation~. Also added in some extras! Added some frozen spinach, cashew nuts & some plant milk for extra creamyness, chili flakes for spice, and a block of crumbled tofu for extra protein. (Thanks for the tip)!! 🤩🤌🏼

Great soup! Used yellow mustard instead of Dijon and was still amazing!!! Pairs perfectly with some garlic bread.
Delicious! I didn’t blend it to a purée and enjoyed all the structures and mustard seeds popping up here and there :) It was also nice to have a recipe of homemade croutons nearby. Thanks a lot!

Super tasty! I used a little more vegetable stock and added some chilli flakes at the end. My recommendation: do not omit the mustard at all. It gives it that special kick. Thank you for this great recipe.
I used this recipe as a base to use some leftover veggies (leek, celery, zucchini and potatoes), followed the recipe otherwise and it is delicious, the mustard adds a special something. Really yummy.
Really simple and easy! I only had one leak so substituted half a yellow onion for the other leak, added a little lemon juice at the end for some acidity, added more salt and pepper. Tasted great. Definitely think it needed the acid at the end though.
This soup was absolutely delicious. The whole family loved it.
Love this soup. Second time I’ve made it. I used whole grain mustard because that’s what I had, and it’s still yummy.
