Hey Stefanie, yes, green asparagus could work well here! Green asparagus usually cooks faster and doesn't need peeling like white asparagus. You could reduce the steaming time slightly so it doesn't overcook 🥰

Nice dish. Love the hash browns and bread crumbs. If this is the only dish, I'd recommend multiplying the amount of the asparagus by 1,5 and potatoes by 2. We needed quiet a lot of ice-cream for desert 😇

I thought this was going to taste too oily, but with patting the potato with paper, it was delicious. Used crispy fried onions for crunch instead of breadcrumbs

This was delicious! I’m not vegan so I added a fried egg, and I swapped the asparagus with Chinese cabbage. Everything worked so well together and I will definitely make this again!
