Loved this recipe! Overall very good and easy! I think having measurements for the potatoes/cauliflower/tomato would be helpful (ie approximately many grams of each is ideal). My aloo gobi felt a little on the blander side but I suspect it’s because my veggies were bigger and needed more spice. Would definitely make again!

I had to tweak the recipe a little bit because of some food allergies, but oh my, this recipe is so good! It's the first one I've tried on the app, and I'm so happy I picked it! It's definitely one I will be making again. All the spices blend so nicely together, and I love the different textures between the potatoes and cauliflower. Honestly, I had used a sweet potato just out of habit of grabbing them, but it still worked lovely in the dish.

You can skip onions when making aloo gobhi, as onion makes the dish sweeter whereas cauliflower already is a “sweet” vegetable. You could also start with fenugreek seeds in oil first or sprinkle some dried fenugreek seeds at the end to add some biterness/reduce cauliflower’s sweetness further.

This was really good. I think my cauliflower and potatoes were on the larger side as the spice was more of a hint than a pow. Adding more spices, another onion and another tomato next time.
