Directions
- Using a sharp paring knife, make an incision along the length of each date, but try not to cut the date in half. Remove the pits from the dates.
- In a small bowl, combine the peanut butter, pumpkin, sunflower, chia, sesame, and hemp seeds.
- Dollop the peanut butter mixture into the dates.
- If desired, drizzle the filled dates with melted chocolate and extra hemp seeds. Enjoy!
Storage
- Store these dates at room temperature an airtight container for up to 4 days, or in the fridge for up to 2 weeks.

Amazing! I used almond butter and sprinkled the tops with coarse salt. I've never made stuffed dates before and these will definetly be a staple in our household.

Wow! I love how simple this idea is, I can add or take out ingredients based on what I'm craving. Tastes like a Reese's Cup (I am/was addicted to chacolate Reese's cup before going vegan- it's actually the last thing I ate while transitioning into a full vegan diet).
I wasn't sure if I liked dates but this recipe comfirmed I like them and it dffinetly fulfills cravings through it's many uses in different recipes.
FYI you can store these even longer in the freezer... I make a similar thing with the seeds and almond butter and little chunks of dark chocolate on top. I make a big batch and then I throw them all in the freezer. When I want a sweet treat, they are like little frozen Snicker's bars straight out of the freezer.
Lovely! Took only 5 minutes to make. Love fresh medjool dates and the filling pairs well. Nice crunch. Didn't have hemp seed and used almond butter. No chocolate. Trying to reduce my sugar intake. This satisfied my sweet tooth! Simple and brilliant! Thank you!
