Ingredients
-
-
⅛ tspsalt
-
1 pinchcayenne pepper (optional)
-
2 cups (316 g)raw almonds
-
2 Tbsp (16 g)raw sesame seeds
Directions
- Line a baking tray and preheat oven to 350°F (180°C)*.
- In a medium bowl, mix together the maple syrup, coconut oil, salt, and cayenne.
- Add in the nuts and toss to coat. Transfer to the baking tray, and roast on the middle rack of the oven for 5 minutes.
- Then remove from the oven, add the sesame seeds, toss to coat, and roast for another 5 - 7 minutes, or until lightly golden**. Enjoy!
Notes
- †Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.
- * We used top and bottom heating (not fan-assisted/convection).
- ** The nuts continue to cook a little after being taken out of the oven and the mixture may still look wet but it will harden as it cools.
Storage
- Store in an airtight container on the counter for up to 2 weeks.
- Store in the freezer for up to 1 month.

I love it !
I can never get hold of refined coconut oil so swapped for toasted sesame oil which tasted amazing but I found the cooked nuts weren't quite as flavourful as the raw marinade. Is there a way to make the flavour more pronounced? I'm assuming just increasing the coating to nut ratio though I'm worried about making them overly sticky.
On a side note just wanted to say how much I'm loving the nut recipies on the app, I've always known I should eat more nuts and seeds but never enjoyed raw nuts so didn't eat many but these recipies have me enjoying nuts and seeds everyday! One thing I'd love to see in the app in the future would be a subcategory filter so for example you could filter by snack and then nut and seed mix to find all the recipies grouped. I'm loving the collections as a way to find new recipies but would be great to cross-reference filters (eg timing or include/exculde ingredients) with sub categories like stir-fries, rice dishes, noodle dishes, curries, pasta etc when you have an idea of what you want to get a more targeted search especially as my liked & saved recipies lists are getting super long with all the yumminess on offer! 😋
I don’t know what I did wrong. But, these did not harden as I hoped. They stayed kind of sticky and gooey.
They taste great- just a little messy.
Mostly, I’ve been chopping them up and putting them on salads.
Delicious and also a nice little gift to bring for friends
So addictive!
I added a titch of sesame oil and both black and white sesame seeds. Yummy !
I’m making an advent calendar of homemade gifts for my Mother in law, this is a perfect addition
Great combination! Not overly sweet, just right. I do make these on the stove, simply by heating a skillet with the syrup and coconut oil. When bubbles begin to form, I add the almonds and toast them for a couple of minutes. In the last minute or two, I add the sesame seeds (so they don't burn). Then I put the candied nuts on same parchement paper to harden.
Such a great recipe. Just the right amount of sweet and spicy. Now I need a video explaining how to stop eating finishing them off in one go <3
Amazing quick snack. Loved it. ❤❤❤
Hi!
Could I add a handful of cashews to this? Or other nuts and make it a sorta trail mix with seseme seeds?
Delicious, luxurious, very easy and festive as soon as you put them in a Christmas bowl ✨
Amazing simple and delicious recipe! I had mostly made Tamari almonds before, this is a really nice way to mix it up. My first try was without the cayenne pepper, but I think next time I'll be more daring :)
