Two bite brownies

1 Tbsp (7 g)ground flaxseeds

½ cup (120 mL)unsweetened soy milk

¼ cup (34 g)roasted unsalted hazelnuts

1 tsp (1 g)instant coffee granules (optional)

Make your own
Directions
- Line or oil a mini muffin tin. Preheat the oven to 350°F (180°C)*.
- Combine the ground flaxseeds and milk in a large bowl. Set aside.
- Add the hazelnuts and dates to a food processor and blend until smooth.
- Transfer the mixture to the large bowl as well, and add all the remaining ingredients. Mix until well combined.
- Spoon a tablespoon of batter into each well. Bake on the centre rack for 22 - 25 minutes or until the top is firm and a toothpick comes out clean.
- Allow to cool for a couple of minutes before removing from the tin. Enjoy!
Notes
- * We used top and bottom heating (not fan-assisted/convection).
Storage
- Store in an airtight container in the fridge for up to 4 days.
- Keeps frozen for up to 1 month.

These were delicious! Some little changes I made for a healthier and cheaper option:
- I skipped the vanilla extract
- I used cheaper dates in the packets rather than medjools
- I didn’t have a muffin tray so just rolled them into balls on a baking sheet & tray!
- For 100% sugar free I used the brand ‘Montezuma 100% Cocoa Absolute Black Buttons’ nothing else in them!
I tried many PUL recipes and I liked them, but this one was bad. Horrible taste, I never want to eat something so disgusting, ever again. Grrr.
Are the chocolate chips you are using sugar free? All the chocolate chips and dark chocolate I can easily get here have sugar in them. I’d have to get special sugar free chocolate from a health food shop to make this recipe actually free from refined sugar.
Made these and shared some with my mom after she had a long day. It was a wonderful moment of indulgence for both of us and a much needed moment to connect and relax before bed.

Easy and delicious!
Ever since making these I can only use one hand. The other always has a brownie in it :) I don't have a food processor so I used my coffee grinder for the nuts and dates; 2 dates at a time. A good way to break a coffee grinder but it was worth it. So yummy. Thank you!

Very good! Thought we had cocoa powder but we didn’t so I just used baking chocolate cocoa bar. They were yummy! Not super sweet but not overwhelmingly tart. It’s nice eating them and knowing they don’t have sugar :)

I’ve been making this recipe for every get together with friends and they always ask for the recipe. My only remark is to use high quality dates. When I made it with dates that were a bit harder the texture was different.

I undercooked mine for a bit and absolutely loved how gooey they were!!! Such an easy recipe for when you want something sweet but not too unhealthy.

I made these last night. Instead of almond butter, I used more hazelnuts and blended them with dates to make a sweet hazelnut butter. The brownie bites turned out to be super decadent and amazing! Love how easy this recipe is…. Can’t wait for my friends to try it tonight.

Yummmmy! These were so good. I love that they taste sweet and have a nice texture to them. I put some raspberries on them that really cut through the sweetness with some acidity ( Padama Lakshmi here 😉) but honestly, super simple to make.
Quick question though. What is the purpose of letting the flaxseeds rest in the water before mixing all ingredients together.

I made these for my mother, for mothers day. Was a big success :D! Very delicious. I personally would like a bit more coffee granules, because the taste kind of disappeared after baking. Not that it mattered, like I said, delicious
I made the muffins for my son today. I used almond flour instead of grinding the Hazelnuts. I also leave out the chocolate chips. My 3 yo son couldn't get enough from them. They are very delicious, but little too sweet for me. I would take less dates next time. Thank you very much for all the recipes.!
Hi! I really like your healthy recipes and your harmony. Just a suggestion about this recipe - the measure for the dates, if you take 3/4 of a cup of dates (for me, 3), is not the same as 142gr of dates (which were 6 dates). After baking it, the flavour was very strong. Maybe more hazelnuts?
