Ingredients
-
2 cups (480 mL)unsweetened soy milk†
-
-
2Medjool dates, pits removed
-
1cinnamon stick
-
-
¼ cup (60 mL)brewed espresso (optional)
Directions
- Combine the soy milk, beet, dates, and vanilla extract in a high-powered blender until smooth and creamy.
- Pour this mixture straight into a saucepan on medium-high heat. If your blender isn't very powerful, or if you don't like small fibres to remain in your drink, strain the mixture through a sieve while pouring it into the saucepan.
- Add the cinnamon stick and maple syrup. Let the mixture heat up, stirring throughout to prevent burning. Let simmer for about 3 minutes, then remove the cinnamon stick.
- Pour into mugs and optionally add a shot of espresso. Stir, and enjoy!
Notes
- †Nutrition tip: aim to use plant-based milk that is fortified with calcium.
Storage
- Best to enjoy immediately.

Oh my! This latte is absolutely incredible! Mine came out an even brighter pink than the photos, so that made me so happy to see as pink’s my favorite color. I also love the natural bright pink beetroot gives versus artificial coloring. I will 100% make this one again! Yum!
J'étais sceptique et pourtant c'est très bon !
I am enjoying this recipe. I didn't have dates so I substituted dried cherries (6) and a few grapes. For the espresso I used a small amount of instant coffee granules. IT IS A HIT! Thank you for the recipe.
Use half raw and half cooked beet, half and half ricemilk and soymilk, one date and cinnamonpowder.
Last time i make it is years ago. Why?
Its sooo delicious.🤤
Delicious, I prefer it without coffee
My mom and I love it! One the dozens recipes I tried, and again I'm am impressed! Thank you☕🥰
This is absolutely delicious. I must admit I was sceptical at first but it blew me away!
Also, one time I added half a Banana that I had lying around and omitted the maple syrup (blend the Banana with the Beetroot and milk) and that is also delicious :)
Delicious!
So so goood! I make it with decaf coffee, and it is very tasty in it’s earthy flavour! I make it several times a week and it’s my go-to drink when I have go to university. Thank you very much!
This was delicious! I'm a new beetroot convert and I'm trying to experiment with different combinations. I was a bit sceptic about a sweet beetroot recipe, but I'm so glad I gave it a shot. This latte is such a fun way to incorporate more goodness into hot drinks.
Lovely for a study afternoon
This is one of the most delicious late I have ever tasted! Strongly recommend!
Obsessed
Lovely, healthy, comforting!
This was delish! Thanks PUL!
Lovely flavour and perfect sweetness. I also tried it with chocolate oat milk, and it was even better than with espresso!
Never a disappointment! Such a great way to enjoy a hot smoothie on cold days with a bad throat. I also added some chia seeds to increase the protein!
At first, it feels like yukh tbh, but in the third, fourth sip; taste begins to develop. I was in doubt while making it but I am surprised by the results.
😃
I was so addicted to the Golden Latte that I was scared to try the beets, but I'm so happy I did. I love the earthy flavor the beets provide! Keep in mind that you will have a purple tongue after drinking :p Thank you, PUL team!
I love beetroot and I love this latte! It might look strange for others but the combo is amazing and I would recommend it to everyone. I've tried both versions: with and without espresso, both delicious but hey, I am a coffee lover so... :-D
This drink is very good! For someone who did not particularly liked beetroot in the past, that was a pleasant surprise. It could be a great alternative for getting children used to beetroot as well.
That was delicious and I cannot wait for autumn to have this again!
Beets?? In a latte? Yes please! They are the earthy flavour I never realized I needed in my drinks. Genius idea and so incredibly satisfying. Delicious!
