Directions
- Add all of the pudding ingredients in a bowl or mason jar. Stir and let sit for 8 minutes. Then stir again to prevent clumping. Cover and chill in the fridge overnight.
- Stir well before adding the toppings, and enjoy!
Storage
- Store in an airtight container or mason jar in the fridge for up to 3 days.
- Mix in the fruit and toppings the day you're going to enjoy the pudding.

What is Dutch-processed cocoa powder?
Dutch-processed cocoa powder is treated with an alkalizing agent to reduce its natural acidity, giving it a smoother, milder flavour than regular cocoa powder, which is more acidic and has a sharper taste. You can use regular cocoa powder in this chia pudding recipe, but we find that Dutch-process cocoa works better.
How can I change the thickness of chia seed pudding?
If you prefer thicker chia seed pudding, add more chia seeds or let it set a bit longer. For a thinner pudding, mix in more plant-based milk until it gets to the desired consistency.
Can I make chia pudding without syrup?
Syrup adds a delicious sweetness to the chocolate chia seed pudding recipe. You can omit it for a less sweet breakfast, or swap it for another syrup, fruit like mashed banana or dried fruit, or your preferred sweetener.
What if I don't like the texture of chia seeds?
You can blend the chia seed pudding to make it more creamy and smooth. This also helps increase the absorption of the omega-3 fats, which are found inside the chia seeds!

This is almost like a dessert for breakfast, so what's not to like! Super easy and tastes really indulgent. I like that everything can be kept in the pantry and made the night before. I'm making a couple at a time to milk the least amount of effort π

Yum!! I was curious about the chopped dates as I only use them in baking, so I donβt typically have them raw. By the morning, I was happily having my chocolately breakfast, and I had this very sweet bite. At first, I thought there was a pocket of maple syrup I hadnβt properly mixed, so I thought that was the last sweet bite. I then realized the dates had softened so much, there was nothing to bite into. Instead, there were these pillowy pockets of sweet treats here and there. I loved this one!
It was a great second breakfast!
I did it without maple syrop because I did not have any at home. Even like this it had a perfect amonut of sweetness.
It turned out quite liquid what I did not expect, maybe next time I will add less milk/more chia seeds or proposed extra toppings which can help make it thicker.
Definitely, the recipe will be used again!!!

I had it for breakfast this morning. It indeed felt like I was having dessert π¨ it was absolutely delicious and the freshness of the raspberries beautifully mellowed out the sweetness of the dates and the banana.
This is so delicious! It felt like eating a chocolate mousse but a healthier version. I didnβt have any granola when I tried it but you bet Iβm making some so I can add that extra crunch to it next time.

I have very early starts on days I have students to teach. I tend to survive in coffee and water until lunch on these days - not the best I know. I decided to try making an overnight breakfast recipe to help entice myself to actually eat. It was very good, and went great with my coffee! So great to have it already made so I could just open and go. ππ

But the chia seeds were a little hard to chew
This was my first time trying chia pudding and it was so simple to make and I really enjoyed the consistency / texture. It was a great healthy snack. I would definitely give it at least five hours to chill and do itβs thing before eating. I tried a spoonful at two hours and it was more of a liquid drink than a pudding at that point. The one thing I didnβt love about this recipe was the taste. I was expecting a chocolate taste, but it just tastes like cocoa powder. I hadnβt realized there was such a significant difference until I researched it while eating my pudding. Iβll try this again in the future with my own twist to give it more of a chocolatey experience.
Most chia pudding recipes online call for 3 tbsp of chia seeds to 1/2 cup milk ratio but your version with 1 cup milk is just so much better. It gives the pudding such a smooth and unclumped (is that a word?) texture. Love the addition of dates as a sweetener and the fun toppings. You're a true artist!
