9.5 oz (270 g)oyster mushrooms, sliced

14 oz (400 g)dry fusilli pasta

¼ cup (38 g)sun-dried tomatoes in oil, drained, chopped

1 tsp (2 g)paprika powder

1 pinchground black pepper, plus more to taste

1 pinchsalt, plus more to taste

4 cups (120 g)fresh spinach
Optional garnish

Directions
- Add the oil to a large pot on high heat. When hot, add the shallots, garlic, and chili, and sauté until lightly golden, about 3 minutes.
- Add all of the remaining ingredients to the pot, except for the spinach, and bring to a boil, then reduce to a simmer. Cook for 12 - 15 minutes, partially covered, stirring occasionally to prevent burning.
- When the pasta is al dente, remove from the heat and add the spinach. Stir until the spinach is wilted.
- Squeeze over some lemon juice and sprinkle on thinly sliced basil leaves if desired. Enjoy!

Yum!!!! I just made it! :)
I have made this recipe a couple times over the last few years and it never dissapoints. My non-vegan family members love it and are always excited to hear when I'm making this pasta for dinner. Sometimes I use nutritional yeast, other times I leave it out, either way it tastes great. Today I used a mix of 5 different mushrooms which gave the meal another layer. It's so easy to make. Minimal washing up. A cozy meal, perfect for fall and winter.
Note: getting the pasta cooked to al dente always takes me a lot longer than the recipe, I would almost even say double the amount of time.

Huge crowd pleaser, really. Literally no one spoke while we ate this and it was done in under half an hour! I swapped out the spinach for arugula and added some vegan parmesan and washed it down with homemade lemonade. Seriously wonderful and comforting meal ready in a pinch!

This was super nice! I skipped the sundried tomatoes and put in some broccoli instead, adding it when the pasta still had to boil for three more minutes. Was a bit concerned I would not like the coconut soy sauce mix on a pasta dish but it was great! Very cheesy.
Tasty dish, I know it's one-pot, but I do think the mushrooms would benefit from being fried separately.

OMG! I couldn't wait any longer to write a comment here. The Vegan Chow Mein was the first recipe I did from PUL and after eating it I literally said 'it's the best thing I've ever eaten'. Then I did a Potato & Red Lentil Soup and my reaction was exactly the same. Then some other recipes - and same situation. It's a game changer. My family loves your recipes. My dad after eating this mushroom pasta said: 'even though I usually don't like some of these ingredients and I'm not a big fun of asian taste it was quite good' (big big compliment, believe me). My brother, who hates mushrooms, was so impressed and told me he didn't think that he could ever like a mushroom pasta this much. Thank you so much for what you're doing! You honestly make my life easier, healthier and taster!
Ps. I love how accurate the given servings are. Usually I have to make 1 or 2 servings more, but here with PUL it's always a perfect amount.

Simple to make but feels like a very luxurious pasta dish- delicious! Personally I found the chilli a bit overpowering so would advise to use less if you’re a bit spice adverse ;) It was still very yummy though!

So so yummy! It seems like a very flexible and forgiving recipe, too (I used a *lot* more mushrooms and spinach than called for simply because what I had was about to go bad lol, and I eyeballed the liquids, and even though I’m not a natural at cooking it still came out very tasty haha). It lasted well for several days in the refrigerator, too, which is always a plus!

I had so high expectations after reading the comments and THEY WERE MET!!! 😍 Amaaazing recepie with so much creamyness and flavor! Im not a fan of mushrooms so I switched them out for a bean mix, worked perfectly! Topped of with some fermented bean/chili oil. I bet this would be delishious with some fresh cherry tomatoes! Omg, i made it tonight and it's soooo tasty !! I used penne, frozen mix mushrooms with shiitake adn bolets, which didnt really cut the cooking time, haha, but it's so easy. and half-dried tomatoes from jar with oil, they are great! !! And the perk i had time to wipe out and clean my whole fridge while it cooked ;p
My first time 'not cooking' pasta and such a hit i ate 1.5 serving.. maybe cause haven't eaten since noon. I just wouldn't recommend using more salt than 1/5 boullion cube for 2 ppl and tomatoes from jar.

This was one of the first recipes, that I made from this app. My 2.5 years old son ate a huge plate of it - usually he does not like spinach and mushroom. And the fact, that I could do this in one pot is a gift for every busy mother. I am honest, we are not 100% vegan, but I try to make our family more and more vegan foods, vegetables are so important for a small kid.

This is an amazing recipe. I had to be careful to actually use fusilli pasta because rotini or others were too large for the water portions. Used diced cherry tomatoes instead of the sun-dried tomatoes and turned out amazing.

One of my favourite recipes so far ! I had some king oyster mushrooms instead of oyster mushrooms and I sauteed them with the shallots and aromatics, as well as asparagus and zucchini since I only had about 150 gr of mushrooms. It was delicious! I also added tomates in the middle of cooking hat turned to mush and gave a lovely tomato flavour to the sauce. Highly recommend!

I honestly make this recipe EVERY WEEK! It's such a creamy pasta and the flavours are genius! I always turn on the youtube video while cooking it! One thing I always do is: I quickly cook the pasta for 7 minutes just to make it almost cooked, meanwhile on those 7minutes I chop all the veggies, then I remove the pasta from the pan and leave it aside. This way I don't have to wait the 12-15minutes later on.

I was a bit sceptical how the ingredients would work together, but in the end everything came together really nice. I would recommend to try it. Even my kids enjoyed it!
I changed a few spices, and removed the yeast, and used a thai chille pepper, came out more of a spicier dish but still wonderful. I have had the original version as well, it's great to have for leftovers. This and the rose pasta are my two favorites on here.

I've made this one so many times now and it is always so so good!
The only thing I changed: I use 2 cloves of garlic instead of 6, because I find the garlic too overpowering otherwise. But that is just my personal liking 🤗

I had high hopes for this recipe because of all the rave reviews! I used the exact measurements but had to use more than double the water. Maybe it's the brand of pasta I used or the fat content in the coconut milk. It ended up cooking like a risotto, leaving the pasta sticking to my teeth. I will give it another try. Great concept! I did like the creaminess that the coconut imparts.

It’s become a regular dish in my house! I love it and tried it with oyster mushrooms today for the first time instead of just button mushrooms. Not sure the difference is worth the price tag tbh, but it’s still really yummy! Maybe I’ll fry the mushrooms a bit more before adding the liquids next time
Also, I usually add edamame or peas or something to bump up the protein :)
I made this today and we loved it! Although I didn’t have tomatos and spinach (I added a bit of frozen spinach) but it was still delicious!

Wow this recipe turned out great, so many wonderful flavors. We swapped out shallots for red onion and used a mild chili pepper. (couldn't find anything hotter in our area of Washington state 😂)
If you are going to try any of the PUL recipes, definitely try this one. I’ve made this so many times because I can’t get enough. All my friends and family loved it. My roommate, who eats meat, said this was the best homemade pasta he’s ever had. I use chickpea pasta to up the protein a little. Overall, I give this a glowing review and the cherry on top is that its easy with minimal cleaning.

We have made this recipe countless times and it’s always so good. I can see why it’s one of the highest rated recipes on PUL. We often make it when friends or family come to visit and it’s always a hit. People ask for the recipe every time. They’re even more impressed when it comes with a video tutorial link. PUL you really do make it so easy to cook great food. We batch made this before our first son arrived and froze it in single serve containers. We had zero time and sleep and I remember just being so grateful eating this I could cry haha. Even after 6 weeks in the freezer it tasted amazing. Definitely a staple in our household! 5++++++ stars ⭐️
Gorgeous recipes I was missing some ingredients, had 140g oyster mushrooms but no others so used brocoli.. I cut the stems and threw that in with garlic, onion and scotch bonnet. Then later added tin tomatoes as had no sundries and used tablespoon of parmasean cheese to replace the yeast flakes.. and added sweety drop peppers, brocoli tops and oyster mushrooms once pasta almost cooked near the end
It was fantastic! So easy to make. My parents and I thoroughly enjoyed this filling meal, and all the amazing flavor, even with some modifications.

This meal is on rotation in my house, I have made this for guests and meat-eaters and they go crazy for it. My friend's teenage daughter wolfed this down! I love to make this with a big salad and it never disappoints. The prep takes the longest but once everything is done, the cooking comes together very quickly. You could also get ahead and wash the mushrooms ahead of time. It is so worth making this dish!
Delicious and so comforting! I found that 4 portions was VERY generous and easily could have served 5. The flavor reminds me of cream of mushroom soup I loved as a child, but the addition of the sundried tomatoes and acid (I used balsamic vinegar instead of lemon) brings it to a whole new level. I use flax milk because I always have it on hand and some blended silken tofu to add creaminess without extra fat. This is one of my favorite hosting recipes, good job PUL team!

Not surprised at all that this dish was fantastic, you are an awesome cook (you seem like a nice person too) and i love your recipes. I did replace the coconut milk with blended raw soaked cashews, cause my brother swears by it and he was right, result was great. Now for some dessert. Choices choices, so difficult.
Honestly, this recipe is life-saving, especially on a weekday. I don't use the yeast but it still comes out amazing and creamy every time. Also I thought there wouldn't be enough water to cook the pasta but you really have to trust the process here!

I've made this recipe so many times now, I cannot count. It's become one of my go-to. It's quick, easy, delicious and just in one pot ! Now I've got my habits : I use way more sun dried tomatoes, and pour the boiling water inside the empty coconut milk can, before pouring it into the pot, so that I don't have to scrape the can to get all the coconut milk (not a native speaker, so I hope it was easy to understand... :P). I would never have thought to combine all those ingredients in the first place : thank you, it's genious and so tasty !

F*** me is this dish so f****** good. It cooks in 30 mins and is just the perfect amount of work for a busy college student. I spend 30 mins to make it and it lasts me a day or two. I just can't have enough of it. I discovered this a month ago, and given that I have been having it 2+ times a week, I had to drop a comment.

Did this recipe several times already and it always saves us when we need a quick and wholesome meal :-)
We make this at least a couple of times a month, it is so tasty and easy! The kids (1 and 3) love it as well. We just leave out the pepper flakes in the first step and add it the grown up bowls at the end.
This recipe is part of my regular meal plan! Super quick and simple. Myself, my partner, and my 6 year old love it. The only thing I do differently is I will cook down the mushrooms and the spices for a minute or two before adding all the liquid.
Love this recipe. With its thick sauce that by the way very enhanced by the taste of those mushrooms it’ s perfect if you look for something comforting and flavorful.

Since the first time, this one-pot pasta recipe was published and demonstrated on a Youtube video in 2019, it became one of our most beloved recipes. We make it at least twice a month. It is easy, really no fuss, after the first time we made it we did not need written recipe anymore. We sometimes switch mushrooms, types of pasta, even spices. Great base for experimentation. Highly recommend this recipe, since even my meat eating husband doesn't feel like it is a trade of.

This recipe is now my go to when I need a quick and absolutely satisfying meal. Taught me the beauty of mixing mushrooms and creamy pasta, and now I cook it about once a week. It's also really easy to switch up if you want to try some new ingredients, since it's such a good pasta base (if you're feeling fancy, try some diced portobello mushrooms and truffle paste - it tastes amazing with all the earthy flavours!)

Great meal for a pantry only meal! When I was having fridge issues I made this and now use it as a base for so many creamy pasta dishes. Easy to sub for anything you have in the fridge OR use all canned items if the fridge is running low (or broken like me).

This is HANDS DOWN my favorite recipe and one that I make regularly for others - it’s always a hit! It’s delicious as is and you can make adjustments to tailor it to you. I personally add some red wine and worcestershire sauce to deepen the flavor, but there are so many great flavor combos out there!

This is seriously amazing! It doesn’t take long to make at all. And once you’ve done it a few times, it easily becomes a meal you can cook without the recipe, or add/change things if you want to.
Not to mention. The creaminess is intense. You get some serious ASMR sounds when stirring the cooked pasta. It sloshes and squelches. You know it’s delicious just by how it sounds! Yummm! 🤤
This meal is one of my favourites. It’s a hit with everyone who has tried it! Even my toddler devours this! It’s also a great way to sneak those greens in! We add chickpeas as well as my son loves them.
Honestly - if you are looking for an easy nutritious meal. Then this is the one you MUST try!
Another staple recipe for weeknight dinners!! It's solo easy and it hits the spot every time! I also load it with more veggies sometimes, like bell peppers and zucchini :)

Loveliest pasta recipe ever! It has even blown away my friends who were always sceptical about vegan dishes!! Highly recommend trying this pasta; the coconut milk makes it suuuper creamy. (I used a bit more liquid but I guess that depends on the pan also)

One of my favorite recipes ever. I make this every month (if not every week!) My boyfriend, who isn't plant-based, absolutely adores this pasta dish. Sometimes I add dried brown lentils to give the dish more nutritional value. I find it tastes even better the next day!

I made this two times and I absolutely love this!!! I added white cooking wine to the recipe and it was delicious. I do cook my pasta in an other pot because I eat gluten free pasta that has a lot of starch and it would make the sauce weird.

I think this was the first PUL recipe I ever made and I was convinced (that being vegan is awesome)! It's absolutely delicious and my partner who is mostly weary of vegan food enjoyed it too!

Thought I would leave a comment on the new website - I love this recipe and I have made it so many times for so many people! Even my non-vegan grandparents liked it (and they definitely would have told me if not :D). I would recommend lime juice instead of lemon juice, though, it makes a huge difference for me. :)
