Optional add-ins (after baked)
Directions
- Line a baking tray and preheat the oven to 250°F (120°C)*.
- In a large bowl, mix the oats, almonds, seeds, and coconut**.
- Mix in the remaining ingredients and toss it to coat.
- Transfer to the baking tray and bake on the centre rack of the oven for 60 - 70 minutes, or until lightly golden***. Stir every 15 - 20 minutes.
- When removed from the oven, let cool completely. It will continue to harden as it cools.
- If adding any dried fruits, stir it in now, then transfer the granola to an airtight container or large glass storage jar. Enjoy!
Notes
- †Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.
- * We used top and bottom heating (not fan-assisted/convection).
- ** Variations: add spices such as cinnamon or pumpkin pie spice.
- *** Shorten the cooking time by turning up the heat a bit, but keep an eye on it and stir more frequently to avoid burning.

i made this today to use up some shredded coconut i had for some time in a jar. i usually decrease the amount of sweetness in recipes, because i don’t like overly sugary taste. but PUL always gets it right with the sweetness and off course it turned out great. the almonds come out perfectly nutty and there is just the right amount coconut to oats that i like.
i know it won’t stay this crunchy forever, but i definitely won’t keep long as well 😋

I've been making this recipe for a while now, with some tweaks, but it's always a hit! I also gift little packages to my friends and they always ask for the recipe, so I paste this link to them :D The latest pairing I've been doing is something around peanut butter, apricot jam, a bit of garam masala, yoghurt, cocoa powder and then top this with granola and pomegranate seeds, it's one of my favourite breakfasts to day. I would love to see some more recipes for overnight oats and stuff like that with pomegranate seeds :D I think it is a very versatile and exciting ingredient to have in a dish! I had this granola recipe saved on my phone and have been making it for years. Decided to check the ingredients and the quantities have changed, for example, the new one uses more almonds and less oats than the original recipe. I will update where I saved mine. I have been making this one for years since PickUpLimes posted it. This is a delicious treat in the mornings of while out on the trail. I bake mine five minutes longer for a little extra crunch and the delicious aroma fills the whole house all day.
Definitely use PUL recommendation and add small pieces of dark chocolate for a sweet treat while out on the trails.

I've had a big batch of peanuts on hand so I've been using them in my granola, but was wondering if I see them seldom used because they are less nutritious? This is my go-to granola recipe and we don't buy Muesli anymore. I make a doubled recipe every two weeks. In the doubled recipe, I use half thin rolled oats and half thick rolled oats. I use cold pressed sunflower oil instead of coconut oil and half honey and half maple syrup. Grated coconut I use sometimes, and sometimes I make it without it. I also mix some cinnamon powder into the oil mixture.
My son eats it everyday for breakfast with milk and fruits, I have it for breakfast with yoghurt and sometimes berries. My husband has it plain as a snack. It's very versatile and has a perfect crunchy texture.

Cannot get enough of your granola recipes! I think this one has to be the easiest to make - only some nuts to chop and in to the oven it goes. I just made it with walnuts instead of almonds, but I find it works really well with Brasil nuts, too.

It’s raining here quite a bit and warm granola sounded like a perfect meal/snack. I had everything in my pantry and the only change I made was adding cinnamon to the recipe. It was delicious. My daughter and I had it with a little cashew milk poured over it for a snack. The rest I stored in a glass jar. Yum!

This is my new favorite recipe. I’ve been making it every week. I’m a flight attendant and it’s been great to travel with. First I packed it in a ziplock bag and brought fresh berries and yogurt to make parfaits. Now I add freeze dried mixed berries from Trader Joe’s after it cools and just eat it as a cereal. Nothing to refrigerate (I use individually packaged plant based milk) means more room in my cooler for the rest of my meals. This is SO GOOD and keeps me full for hours. I even made parfaits for the crew and they all agreed—this granola is delicious! Thank you!

This is the beeeeeeest granola I have ever made! I was actually kind of skeptical on cooking it on such a low heat for so long but wow it turned out amazing. I tried it halfway through and I was like, “oh, yeah, this is gonna be amazing.” I made everything to the T, except I added cinnamon and left out sunflower seeds since I didn’t have any. What a great granola recipe! I've made it several times and we reach for a bit every time we're looking for a snack. I've found using a baking pan that has an edge is less messy when stirring during roasting. Love the flexibility using different nuts and seeds.

First off, congratulations on your engagement!! You both are my example of what a perfect harmonious couple looks like, so thanks for setting that role model for us viewers. I also am super appreciative for your thoughtful Youtube videos and the updated PUL website. I've been following you ever since your first video (when they were a bit shaky) and haven't stopped loving your nutritional advice and yummy recipes. I've watched your "5 Foods I Eat Everyday, and so could you" probably over 40 times! The advice on there is so helpful that I am using that video to teach my mom about basic daily nutrition since she has high cholesterol issues.
Back to the main reason why I messaged you for this coconut & almond granola recipe - I have a couple of questions:
1) I have raw coconut meat; I took off the brown skin - can I shred that and add to the granola mixture and then bake it? Or do I bake the raw shredded coconut separately (at a lower temperature and in less time) and then add it to the granola after it has baked in the oven?
2) You suggested adding cinnamon and/or pumpkin spice - do I add these before or after baking the granola in the oven?

This is my ride or die granola! When I’m batch making granola this is the recipe I use. It’s super versatile, keeps super well in the pantry and goes with anything, yogurt, milk, on a smoothie, I’ve even had it with apple sauce. I think the long bake at a low heat helps to bring out a really nice caramel-y flavor.
I’ve shared jars with my mom and friends and they say it’s one of the best they’ve had! Great as a cute gift if you’re homemaking presents.

I made this granola and it was sooo good. I'll do it again, that's for sure! I also checked the calories again the "low sugar" store bought and it was the same, while the taste of the home made was a 100 times better.
