I used sunbutter instead of a nut based butter because of nut allergies in the family. The texture is a bit soft, they fall apart a bit, but they taste good and have the perfect amount of sweetness to them. A good healthy alternative to other more sugary muffin recipes.

Great ingredients , I cooked 10 mins longer until toothpick came out clean. Even one day later the texture is still kinda mushy in the center which I don’t care for. Have thought about making again adding some almond flour?? Any ideas?

Hey Patty! Thanks for sharing, adding some almond flour, oat flour, or a bit more baking powder could help firm up the texture, or you could try reducing the applesauce slightly. Baking a little longer (we use the top/bottom conventional setting on our oven, so there might be some variation in baking times based on your oven) and letting them cool fully before storing might also improve the consistency. The moisture from the blueberries could also be a factor, so using fresh ones or tossing them in a bit of flour before mixing might help. Let us know if you experiment with any changes 🤗

Hiya Amitabh! Indeed you can use dried blueberries if you'd like. We'd recommend soaking them in warm water for 10-15 minutes before draining and adding them to the batter 🙂

I tried these and the blueberry cookies. They turned out good. However, I found that the baking times are totally off for me. It takes me atleast 10-15 minutes more baking time than suggested in the recipe. Hope I am not doing something wrong!

Hey Isha, thanks for sharing your experience with the muffins. We use conventional heat (the symbol on our oven shows the top and bottom heating without the fan) with the pan in the middle rack of the oven. In case you use a different oven setting or placement of the pan, the baking time may vary. We hope this helps for now and happy baking!

Incredile, really like this recipe. Works great as a mug cake too (2 serving size in one mug for 3min 800W was perfect for me).

Have tried baking with both peanut butter and almond butter. Highly recommend the almond butter, applesauce, blueberry flavour combo.

I tried these and they came out amazing. Very filling too as on the go snack/meal. Substituted peanut butter for almond butter. And used mashed bananas in place of the applesauce (I hugely appreciated the substitution recommendations on the recipe).

These are delicious!! I didn’t have apricot so I used dried cranberries and I also used peanut butter in place of almond butter and they came out fantastic. Super easy to make with lots of things already on hand.
