1 cup (150 g)fresh blueberries, washed, dried

½ cup (120 mL)unsweetened soy yogurt†
Directions
- Gently mix the washed blueberries and yogurt together in a bowl.
- Using a fork, drop the yogurt-covered berries one by one in a single layer* onto a parchment-lined baking tray. Place in the freezer for 30 - 60 minutes, or until the yogurt coating looks mostly frozen.
- Peel the berries off the parchment paper and transfer them to an airtight container. Enjoy immediately, or return to the freezer to store until ready to enjoy.
Notes
- †Nutrition tip: aim to use plant-based yogurt that is fortified with calcium.
- * Freezing the blueberries in a single layer first helps them not stick together later on!
Storage
- Keep sealed in the freezer for up to 1 month.

This may be a silly question, but could you use already frozen blueberries for this? Fresh aren’t usually available where I am but there’s almost definitely frozen blueberries.

What a refreshing fun little snack to have ready in the freezer! :-) I added cinnemon to the joghurt - also delicious! Next I'll try it with a little peanut butter swirl :-)
