Cold weather is tolerable because of all things that make it cozy: comfy sweaters, warm blankets, and warm drinks. Oh, the warm drinks! This gingerbread latte - while often enjoyed during the holiday season - can certainly be enjoyed year-round, and feels just like a hug in a mug.

  • crushed gingerbread cookies
  • vegan whipped cream

Directions

  1. Add the barista milk to a saucepan on high heat. Whisk throughout to create some froth. Stay with it, as it often only needs a minute to heat through. When the milk starts to simmer, remove the pan from the heat and pour it into your desired mugs.
  2. Return the saucepan to the stove on medium heat, and whisk together the espresso, maple syrup, molasses, cinnamon, ginger, nutmeg, and clove. Let everything heat through.
  3. Divide the espresso mixture between your mugs and top with whipped cream and cookie crumbles, if desired. Serve while hot, and enjoy!

Notes

  • Blackstrap molasses is a dark, thick, often bitter syrup, which is produced during the sugar-making process. You can substitute it with 1 Tbsp (15 mL) dark corn syrup, or maple syrup, or ¾ Tbsp (9 g) packed brown sugar or granulated sugar.

a nice warming drink for the colder seasons although a touch too sweet for me! This recipe definitely serves more than 2, i would say the 3 cups of milk are enough for 3 large coffees

Not normally a coffee fan but this is delicious 😋 used black treacle ,which is more common in the uk, instead of molasses

The sugar video you're referring to also shares that sugar might contribute to our own satisfaction, sense of cultural or social well-being, and overall enjoyment. For the almond brownie cookies, the sugar also helps contribute to the flavour and texture. If desired, you can experiment with less sugar or omit it though 🙂

In general, at PUL, we believe food serves to 1) nourish the cells, and 2) nourish the soul. In the first instance, we might think of foods that are nutrient-dense and help our bodies function at the most optimal (such as veggies, fruits, legumes, etc). In the second instance, we might think of foods that we give ourselves permission to enjoy, even if they're not traditionally deemed nutrient-rich.
