Absolutely delicious. I’ve been trying to eat a more plant forward diet. The biggest problem I’ve had is that I just don’t like a lot of the meals I’ve tried. This is the first one I’ve really liked. But the protein is not high.

Soooo delicious! Added some spinach coz it was in the fridge and used rotini coz it was in the cupboard. This recipe is so easy and flexible. I served this at a relaxed dinner with friends and it was gone before I had a bite! It’s excellent every time.
The creamy avocado sauce was a first for me. The sauce has a delicate flavor and I loved it !
I made this for a family gathering. There were five or six other dishes on the table, but once somebody tasted this dish, it was completely gone within 10 minutes. Incredibly easy and quick to prepare and so extremely delicious. I substituted gluten-free pasta and plain almond milk yogurt.
Delish and so filling! Substituted soy yogurt with coconut milk labneh and seasoned with fresh oregano.
Maybe it's only me but avocado based sauces for pasta are interesting but not preferred.

As I was pouring the avocado mixture, I was skeptic that almost-guac would do well on hot pasta. How could I doubt the PUL team!? It was fantastic! I'm already thinking of making it for a potluck lunch in a few weeks. The creaminess if the avocado went so well with the sauteed vegetables and the zing from the citrus and chili flakes. I also used a fire-roasted bell pepper, put it in for the last 3 minutes. Delicious!! And on top of all that - the timing was so spot on for how long everything took. Wonderful job PUL!
Delish. The avocado sauce is so creamy and would probably work on a lot of other dishes or as a dip
I made this with a twist, used spaghetti, skipped asparagus and tomato, instead used mushroom and bell pepper and it turned out amazing!! The heat from chilli flakes and pepper and the creamy avocado basil sauce made this soooo delicious!
Good & So easy to make. Half a lemon was too strong for me and I definitely needed Parmesan as suggested. I like the idea of adding basil from a previous comment- like the idea of this recipe leaning pesto. Thank you PUL!
New yummy dish going into our dinner rotations. I added some pine nuts, oregano and onion flakes on top for extra crunchiness. It was great!

This is super tasty and fast and easy to make. It's an ideal weeknight dinner during asparagus season. We used a wholemeal spelt pasta which had ridges that clung to the sauce really well. We topped it with basil and the vegan parmesan which we make regularly now in our house. Our toddler loved it and wolfed it down!
