So good!! Love the creative flavor combos like dill and pickled jalapeno. Easy, quick, and very satisfying.
I was quite sceptical about adding chickpeas to the lemony avocado, but I just went with it. Wow! So delicious! Mixing the salad bits through the avo chickpea mash was genius. It made every mouthful a perfect combo of flavours! We decided to add some shawarma spiced vegan chicken pieces to the top of ours and it went amazingly. We didn’t have alfalfa sprouts so added some chopped mustard greens but any microgreens or salad leaves would work. Definitely will be making this again
Made this for breakfast this morning and it was yummy! I added more sea salt and used butter lettuce instead of sprouts
I made this for lunch. It was surprisingly delicious with just a few ingredients and filling. Loving the quick meals.

The avocado I had on hand wasn’t good anymore so I just used vegan Mayo, with all the other ingredients the same and this was so good and so different than most chickpea salads that I’ve tried! We even ended up snacking on the little bit of leftovers later in the night with some crackers!
made this for lunch today- simple, fresh and filling. and oh- delicious. the jalapeños and lemon added such a cool dynamic. i used coriander instead of dill.
I’d have never thought to add lemon zest, cucumber, pickled jalapeño, radishes to a dish like this, but those simple additions really took this to the next level! Don’t skip any of the ingredients, if you’ve got ‘em! Blown away by yet another recipe.
*I didn’t have fresh dill so I used dried, would love to make a point of buying fresh next time. Didn’t have sprouts either, so I used microgreens which were an incredible topping with the radishes.
Simple and delicious! Didn't have radish or sprouts but topped it with your pickled onion recipe and it was perfection!
