A quick dip in a baking soda bath gives these pretzels the signature golden colour and chewiness that soft pretzels are known for. Everything seasoning gives a fun flavour to this recipe, but feel free to use regular sesame seeds or plain flaked sea salt instead.

This recipe worked great even though I used whole wheat flour, and I really liked the everything seasoning. Was a nice variety from the usual plain salt pretzels I’ve made before 😋

Substituted cinnamon and sugar for the everything seasoning for a sweet treat

My first time making pretzels as well. They were super delicious but I had some trouble in the beginning. I live in Australia and I think our plain flour is the closest we have to all purpose flour in the recipe but it didn’t work. I couldn’t get the right consistency so I switched to 00 pizza flour and it worked so much better. Thought your Aussie and Kiwi readers might like the tip.

Had the same problem as Nikki, despite measuring everything exactly. The pretzels also didn't brown in the baking soda bath, sadly. It would have been a great dough for bagels though!

Hey Hanni, thanks for sharing your experience! The pretzels indeed won't brown in the baking soda water, it's more that this step helps coat the pretzels so they become more golden after they are baked. So you'll see the browning when taken out of the oven (not when taken out of the boiling water). Were there any issues experienced with this recipe? We're here to support if anything else comes up. Just a heads up, this recipe needs more precise measurements, and measuring in grams and mL is preferred where possible 🤗

I don't know what I did wrong, measured everything exactly but it became way too hard and impossible to knead. I think it needed more liquid.

Hey Nikki, thanks for taking the time to share your experience. Because of your comment, we took the time to re-make the recipe today and found the dough to have a slightly moist consistency (definitely not too dry) - it was just the consistency we wanted it to be. Might I ask if you measured the ingredients in cups/Tbsp instead of weighing them in grams/mL? Baking recipes like this one require more precise measurements, and measuring in grams and mL is preferred where possible. If you don't have access to a scale to weigh the ingredients, we'd recommend gently spooning the flour into your measuring cup to ensure it's not too densely packed. I hope this helps in case you decide to give the recipe another go! ☺️

Hi PUL Team, I love how incredibly thorough you are! I am also based in NL so I used a scale and grams for the dry ingredients but a cup and Tbsp for the liquids. I will try again soon (with only a scale) and get back to you, thanks again and sorry for the trouble 😇🥨 Loving all the content btw, keep it up! Your work is partly the reason why I'm vegetarian 3,5 years on and love it and I loved everything I've ever tried from your recipes. ❤️🌿
