Directions
- Line a baking tray and preheat the oven to 390°F (200°C)*.
- Cut the beets into ½ inch (1 cm) slices and transfer to the baking tray. Roast for 40 - 45 minutes, or until cooked through. Set aside to cool.
- Add all the ingredients to a food processor and blend until smooth. Taste test and adjust the lemon, tahini, oil, and salt to your liking.
- Plate, garnish, and enjoy!

- * We used top and bottom heating (not fan-assisted/convection).

- Store in an airtight container in the fridge for up to 5 days.

This recipe is absolutely amazing! I used a high-speed blender, which made it extra creamy. I decided to boil the beets instead of roasting, so the color was a bit less vibrant, but it still turned out fantastic. The flavors were perfectly balanced with a hint of sweetness from the beets. It’s honestly the best hummus I’ve ever had, definitely going to be a regular in my kitchen!
This is my new favourite dish (it’s such pretty pink dip) and it’s so fun and easy to make! I brought this to a potluck and everyone loved it. I couldn’t even take the leftovers home :D
I made a minor modification by adding zaatar and cumin powder. I didn’t have time to roast the beets - I used steamed the beets, but I’ll try the roast version next time. Thank you for this recipe.
I just want to advice everybody to just follow the recipe! I tried to make it with pre cooked beets from the dutch supermarket and the hummus turned out way to watery. Even though I skipped the 60 ml water. So I will try again when I can get my hands on raw beets!
Does anyone know if this is freezable? It’s delicious but I made way too much!
Vibrant is right! I’m not a big beet girl - but tried out this recipe based on the stellar reviews + wow! 🤩🤩 The beets provide a unique taste without being overpowering. Some farmers market pita chips proved to be the perfect pairing! YUM!

The ‘energy and time conscious’ person in me would rather cut the beetroot in small pieces / cubes and then give it a 10 min steam Vs baking in the oven for 40 mins. It cuts down on the Cooking time immensely and easier on the energy bill pocket :)

This is one of my favorite recipes on Pick Up Limes, I go to it over and over again. Every time I share the dip with someone they ask for the recipe and everyone always comments about how visually appealing it is as well.
Love the creaminess of the dip, and the beetroot tastes great. I opted for a quicker version and used pre cooked beetroots.

I've made the recipe with minor changes.
I've added a bit of cumin seeds, some ice cubes, and peanut butter instead of tahini.
It's really yummy. Unfortunately my son tried it (yay) but didn't like it because it "stings".
I think it's the raw garlic. I've made this mistake before :-/
I love this hummus! The colour is so uplifting. I like to take a batch to work so I can snack it there with carrots or breadsticks.
I just used one beet, because I wanted to see how strong their taste would be, and it already gave the hummus that beautiful colour! I wasn't the biggest hummus fan, but homemade just tastes so much better. Thank you for this recipe, I love it! <3

This was absolutely delicious. I used canned baby beet roots as I did not have time to roast fresh ones. I also eliminated the Tahini because I did not have it on hand. I eliminated the water because the canned beet roots had a lot of water within the beetroot itself even after they were drained.
Thank you for this healthy and delicious recipe. I then ate it on a whole grain wrap with roasted red pepper, smashed avocado with fresh lemon juice (because I live in Australia), baby spinach and sauteed carrots and a sprinkle of chilli powder for a kick.

This dish is so beautiful and delicious! A nice twist on classic hummus. I'd been wanting to make a beetroot hummus for a while and for some reason was intimidated by working with the beets, but the PUL recipe made each step super approachable and easy. Just wanna add that I was low on garbanzo beans but I had kidney beans on hand and, color-wise, that worked really well, too!

This is my GO TO beetroot hummus recipe. I first made the mistake of boiling the beets and it resulted in such a watery hummus that went bad so fast :( but then i followed sadia s instructions to roast them and their sweet earthy flavor was LEGIT. i ve taken this recipe to parties and friends keep requesting it cuz it s that good.

This has become my go-to hummus recipe! My usual way to have it is on toast with avocado and sprouts, it is so gorgeous with the bright hummus. It has a slight earthiness to it, but the beet flavor isn't too pronounced, so if you're not a huge fan of beets I would still recommend it.
One word: wow! Perfect snack option for me as a diabetic, and complements so well with seed crackers. This hummus has been enjoyed in its own right
