7.1 oz (200 g)dry fusilli pasta

1 Tbsp (15 mL)olive oil

1zucchini, cut into 1 cm pieces†

1 tsp (2 g)curry powder

¼ tspsalt
-
1carrot, grated
-
1medium tomato, chopped
-
1 cup (30 g)fresh baby spinach
-
¼ cup (4 g)fresh parsley, chopped (optional)
Hummus dressing
-
1½roasted red bell pepper from a jar
-
-
1 Tbsp + 1 tsp (20 mL)white vinegar
-
1 pinchground black pepper (optional)
Make your own
Directions
- Cook the pasta until al dente. When cooked, drain, then add to a large bowl.
- Meanwhile, add oil to a medium pan. When hot, add the zucchini and cook until lightly golden, about 4 - 5 minutes.
- Then add the curry powder and salt. Cook for 2 - 3 more minutes. Stir often. Then transfer to the large bowl as well.
- Add all the dressing ingredients to a small food processor. Blend until smooth.
- Add the carrot, tomato, spinach, and parsley (if using) to the large bowl.
- Drizzle over the dressing and toss to combine. Enjoy!
Notes
- †For us, 1 zucchini weighed 320 g.
Storage
- The assembled salad is best enjoyed immediately.
- Store the pasta salad base separately from the sauce in airtight containers in the fridge for up to 3 days. Combine when ready to enjoy.

Really quick and delicious. I used more vinegar in the dressing and swapped the pepper with Ajvar, since that is what I had at home. Yummy! :)
I bought gluten free noodles. It taste good but feel I need a little more sauce. However, I don’t follow measurements exact with the remainder of the dish as I use the eyeball method.

I made this as part of the meal prep plan. It’s delicious. And a lot if it, so plenty left for lunch for tomorrow. I used whole wheat penne to reduce the carbs ‘ effect.
