I bought gluten free noodles. It taste good but feel I need a little more sauce. However, I don’t follow measurements exact with the remainder of the dish as I use the eyeball method.

I did the meal prep in a leisurely 1.5 hours and had the pasta salad for dinner. It was an effortless toss together and so good. It will feel like a ‘no cook’ week!!
