It was also a big hit with our 3-year-old and we will definitely make this again! I personally found the amount of salt worked. We used sodium reduced soy sauce.
My husband made this one and raved about how quick, simple and delicious it was to make and our 2 year old devoured it. However, if I could go back I would 100% peel the eggplant. We grow white eggplant and the skin became extremely tough and detracted from the dish. It’s very possible it’s just the variety of eggplant we used, but going forward we’re going to peel regardless of the variety and cook much longer. To illustrate how much my husband loves this dish, he calls me from work every day on his lunch break and if he hears I haven’t eaten and that nothing sounds good he ALWAYS suggests this dish and then describes the steps and ingredients I’ll need reassuring me that I will love it and reminding me how good it was when he made it. It’s quick easy and delicious.
This tasted amazingggggg. Next time I would probably use ramen noodles and cook the eggplant longer (or cut into much smaller pieces). Some chili oil added to this is *chef’s kiss*.

This was quite tasty and I had all the ingredients including all toppings. It is always nice when that happens. I did have to cook the eggplant for closer to 15 minutes to get it to where I like it. 🍆

I’ve done this pasta twice already and always always a hit. I’m focusing on using your receipe with miso as I have a big jar to go through ! And this pasta is now a staple in my menus! Love the deep flavor and even better if you cook the sauce with a bit of pasta water and end the plate with a bit of Parmesan on top !!!
This was delicious! I added zucchini also just for more veggies. I also only added a 1/4 of the amount of rice vinegar just because I find the flavor overbearing a little and it was just right for me!

Used light soy sauce and udon noodles instead. It was yummy! The suggestion to put chilli oil was a game changer

This was such a lovely meal! Easy, quick and só tasty! Because even soy sauce less salt is a bit salty for my taste, I used Shoyu mild 12 months fermented soy sauce, a great alternative for a less salty taste ✨💫

I liked this but found it a bit salty. Also found you need to fry/cook the aubergine for quite a bit longer than the recipe suggests. I added tahini to the sauce to make it creamier.
Use the pasta water to make the sauce 🤓 The dish is decent but kind of lacks enough protein and I prefer different ways how to prepare aubergine (esp. baking).
Will be making this again for sure!!

This is too good! I used mushrooms instead of an eggplant. I also substituted white miso with red miso.

I made this tonight. I expected a bit more from it, so I added crunchy crumbled tofu(home made) and crushed peanuts for some extra kick
This was so good! I added some vegan minced meat to the sauce and used spring onions instead of shallots which worked great as well
I liked this dish but it would have benefited from a contrasting crunch- I think snow peas would be a nice addition.
Bit more eggplant creates a bit fuller sauce
