These beets were delicious! I don’t usually love the taste of vinegar, but this recipe was perfectly balanced. The beets were also incredibly versatile and easy to incorporate into meals throughout the week.

Hiya Marzena, you can substitute white vinegar with apple cider or wine vinegar if you'd like! It will change the flavour slightly, but either will work 🫶

Very nice! I have pickled vegetables before but never thought to pickle beetroot. The flavour of prepackaged beetroot is a little bit too much for me (freshly roasted is muuuuch better imo) but this adds a nice tangy flavour which I like!
I must say today is the third day and there is now much more flavour than the first day :)

This was delicious, thank you! I am a bit curious as to why the recipe says they only last for one week in the fridge, since many other pickled beets recipes say that pickled beets last for months in the fridge. Can they last longer than one week? 😊 Can't wait to make these again!

Hi Tina, I'm so glad to hear you're enjoying the pickled beets! While we recommend consuming them within a week for the best flavour and texture, they can actually last 2-3 weeks in the fridge if stored in an airtight, sterilized jar. Personally, I wouldn’t recommend keeping them for a month unless you increase the vinegar a bit to boost preservation. If you do store them longer, just keep an eye on the taste and smell to ensure they're still fresh 🤗

Delicious, my grandpa always makes it with raw beetroot, that is adding a nice crunch to the pickled beets.
