Terrific dip and great crowd pleaser for appetizers! I did struggle to get the texture similar to what’s shown in the picture here but that could just be my food processor, which is not the greatest. However, the blend of paprika and za’atar is divine! Also had fresh mint on hand so I divided it up on two plates, one garnished with cilantro per the recipe, and the other with fresh mint leaves just to experiment a bit, and both were great. This was one of those dishes that everyone asked me for the recipe!

Hey Elyse, a powerful food processor is indeed best for dips like this. In case you make the dip again and prefer a smoother texture, you could try adding a touch of oil to help it blend smoother. So glad that it was still enjoyed by everyone :D

A lovely dip that is so easy to make although one has to wait for the carrots and onion in the oven😆 A nice trick is to toss the vegetables with the spices before they are being toasted; the dried spices attain a more complex character vs just using un toasted in the dip So packed with a balanced sweet/umami flavour, and it was so good as a dip for salty herb crackers
