1 cup (158 g)raw almonds

1 cup (130 g)raw cashews

⅛ tspsalt

1 cup (92 g)unsweetened shredded coconut
Optional coating

unsweetened coconut flakes

lime zest
Directions
- Zest the limes and set aside.
- In a food processor, blend the almonds, cashews, and salt into a coarse flour. Empty into a large bowl.
- To the emptied food processor, add the dates, shredded coconut, and the juice from the limes. Blend into a coarse paste.
- Transfer the date paste to the large bowl as well, along with the lime zest. Mix well.
- Fold through the dried cranberries. Scoop up some of the mixture and roll it into little balls.
- Roll in a coating, if desired, and enjoy!
Storage
- Store in an airtight container in the fridge for up to 1 week.
- Store in the freezer for up to 2 months.

I just prepared these as a post partum snack with orange and lemon instead of lime. Super yummy😍
I went as fast as I could and it still took me 40 minutes to make these 😅. But, they are absolutely phenomenal! Tastes like key lime pie! ☺️

I really enjoy the sour and fresh taste of lime with the sweetness of the dates. I also made this recipe with lemons, which is also a good combination.
My second energy ball recipe. Easy to prepare and really tasty. A treat but healthy too. Better than a biscuit or sweet snack and still providing that sweet kick. Fab.

Really zesty and tasty! I struggled a little with getting the mixture to form into balls- - could have been because the cranberries I used were AJ-sweetened, so plumper and more difficult to work with. Even though I don’t have the greatest food processor, the nut mixture blended well and the dates and lime juice also incorporated nicely, but when I combined the wet and dry mixtures, it didn’t seem to bind well. A few dashes of maple syrup helped (though almond butter may have also helped?). But , anyway, the taste is still super refreshing and delicious!

I just made these balls and they are incredibly tasty ! The tanginess from the lime is absolutely delicious and pairs beautifully with the coconut. They even convinced my husband who is a fan of chocolate and usually does not enjoy fruity treats. Will be making them again very soon.

Is there a good substitude for the dates? I am unfortunatelly not a fan of the taste, but the combination of cranberries and limes sounds very goods, so would like to make it somehow.

Finally tried this, as we got gifted a few limes. Worked out perfectly, even without a food processer (my 2 year old is horrible afraid of the noise).
I just used ground almonds instead of raw and used a sharp knife to chop up the cashews quite small.
The important thing is to soak the dates in hot water before mashing/cutting them. This helps a lot to hold the dough together. Works for all the recepies I've tried so far.
Obviously the bliss ball taste great, but that is almost a given following PUL recepies

These energy balls are yummy and are good complements to fruits for fika👌🏻😋. I just put everything, except raisins/cranberries, in my food processor to speed up the process. It worked very well and I had my fika faster🤣. Lime and coconut are a wonderful combination, as it tastes fresh and deliciously keen in parallel. The sole reason for not giving it a 5/5 is that I’m a chocolate fan. A matter of preference😅
