1 cup (160 g)uncooked red rice

2 tsp (10 mL)vegetable oil

1medium onion, chopped

3garlic cloves, minced

1 Tbsp (6 g)freshly grated ginger

2 cups (328 g)cooked chickpeas

6.2 oz (175 g)button mushrooms, sliced

1 Tbsp (6 g)curry powder
-
½ tsppaprika powder
-
1⅔ cups (399 mL)canned full-fat coconut milk
-
1bell pepper, sliced
-
1 pinchsalt
-
1 pinchground black pepper
-
4 cups (120 g)fresh spinach
-
15cherry tomatoes, halved
-
½lemon, cut into wedges
Directions
- Cook the rice according to the package instructions.
- Meanwhile, add the oil, onion, garlic, and ginger to a large pot on high heat and sauté for 3 minutes. Add splashes of water as needed to deglaze the pot.
- Add the chickpeas and mushrooms to the pot and cook for 5 minutes.
- Add the curry and paprika powder and sauté for one minute longer.
- Add the coconut milk, bell pepper, salt, and pepper and cook for another 5 minutes.
- Add the spinach and tomatoes at the end, and stir. When the spinach has wilted, remove from heat.
- Serve the curry with the rice, squeeze over some lemon, and enjoy!
Storage
- Store in an airtight container in the fridge for up to 3 days.

I was so excited to make this, and was quite disappointed with the unaltered results! I felt that it was lacking a good bit of flavor, so added rice vinegar, coconut aminos and some sriracha to spice it up. Other than the lack of spice/saltiness, I really enjoy all the ingredients together. Glad I know for next time!

I've been cooking this curry for years and I never get tired of it. The cherry tomatoes give a juicy and acid point that I love.

For me this curry was ok but bit all over the place. There are so many different ingredients that the dish ends up with no focus. Removing the bell pepper and tomato would work better in my opinion. Also it is very bland with the only spice being curry powder. Adding cumin, coriander, and chill upped it a lot for me!
Delicious! Absolutely packed so full of veggies that I felt virtuous eating it hehehe! Super easy to make and really filling too. I couldn't find any red rice, so I'll have to look out so I can try that type. This was perfect after a long day though!
So easy,still delicious. Using lemon really makes the difference and became more flavourfull after a day of rest. Unfortunately I had no spinach, so I uses broccoli, but next time I will definietly try with spinach.
This was d e l i s h o u s ! Just - i made it THAI curry instead - so instead of curry and paprika powders i've added 1 tbsp of green curry paste for 2 portions and 1 tbsp of coconut sugar and 1 tbsp of soy sauce, as you make curry generally. Used green beans for spinach and no salt and pepper - cause curry paste and soy sauce. so just wanted to share how versatile that might be ! Also didn't need rice imo- chickpea was filling enough.
Wouldn't think of lemon, but that is a great add-on.
Also - do you think i could so anything with the water the cooked chickpeas *from frozen) cooked for 5 mins ? Like your chocolate mousse I've been wanting to try / Or isn't there enough 'substance' from cooking from frozen? Love, thanks .

This is a real staple in our house. We use this as a base and add roasted cauliflower made as per the roasted cauliflower lentil curry (we prefer the coconut milk base to the tomato base)
It was very good. I had to use reg. Tomato’s , frozen spinach ( I recommend to squeeze water out) . I love your easy cooking. I did not gave it 5 star because I had some better tasty other Rezepte from your curry line . Still will cook it again !
Any tip on what to use instead of coconut milk please? Apparently it's yet too strong of a taste for me as I am only transitioning to plant based. Thanks!

I was just wondering whether it is possible to sub fresh spinach with frozen ones because the frozen ones are washed, organic, cheap and always available and here in France, I can never find fresh washed organic spinach. Big thanks to you for all the delicious and healthy content.

I first made this over a year ago and it is now one of our go to meals. We LOVE it. It is incredibly easy to throw together, absolutely tasty, and a great way to use up veggies from the garden. My toddler and veggie-hating husband gobble it up.
I added pandan (screwpine) to the recipe for some aromatics, it worked wonders.
Great recipe, a favourite. A friend recently asked me to bring my " tofu dish" to dinner, that she'd had previously..well I wracked my brain...she meant this great curry!

Good weeknight recipe. I usually don't like spicy food but for this dish, I felt that it needed to be garnished with the chili flakes to boost it up a notch.

A great recipe!!! And I used coconut milk for the first time in this recipe, ( I wanted to avoid this kind of milk somehow, but I can find that has a lot of flavor in some dishes), so this one I really liked it, the colors and texture. I served it with brown rice and it was such a great combination. 😊

I cooked this recipe many times before, always with a thai green curry flavor but without respecting the cooking minutes so in fact, overcooking it. I tried recently respecting the indications and it is even better. Many thanks to Cris S, since she mentioned the crunchiness I had never experienced with my overcooking. This is one of my favorite go-to recipes! It is so easy and delicious. When I'm in a pinch I use canned mushrooms (fresh is best) but it still tastes great! I made a 4x batch for my family reunion to feed 31 people and it was a crowd pleaser even with all the non-vegan/vegetarians.
I made this dish for dinner and it was delicious and so easy! I added about ¼ tsp Sriracha for a bit of spice.

Recipe tastes nice but I do have an issue. Underestimating cooking times is useful for not scaring people away but there is a limit. The total cook time is 10 minutes and the first two steps themselves take 8 minutes, so the rest of the process is supposed to take only 2 minutes? Give me a break.
Mmmm! I just made it! It's so comforting and creamy and I love that the peppers are cooked just enough to retain their crunch (but kill those pesticides 😂)!
