Another granola recipe to add to our collection! This time, with crunchy roasted almonds, sweet dried mangoes, and the fluffy crunchiness of puffed quinoa. Make a big batch, and you've got breakfast and/or snacks sorted for the week!

Directions

  1. Line a baking tray and preheat the oven to 320°F (160°C)*.
  2. Add all the dry ingredients to a large bowl and stir.
  3. Add all the wet ingredients to a separate medium bowl. Whisk until it's all combined into a smooth caramel-like sauce.
  4. Pour this wet mix over the dry mix, and stir until coated.
  5. Transfer to a large lined baking tray and spread it out. Bake on the centre rack of the oven for 30 minutes, or until lightly golden. Stir once halfway.
  6. Remove from the oven and allow it to cool. It continues to harden as it cools. Add mango and hemp seeds, and toss.
  7. When completely cooled, transfer the granola to a storage container. Enjoy with fruit, and yogurt or milk!

In the past few years, i made this recipe a several time, like 20 +
sooo good in the morning.
I prefer to keep the oven in the 250-300 range, and cook it a lil longer, but really, it is simple and perfect :)

Almond butter is made from roasted almonds and has a creamy texture, similar to peanut butter, whereas almond paste is a sweetened mixture of ground almonds, sugar, and sometimes others flavourings. Although, in Dutch almond butter is also translated to "amandelpasta". Hope this helps for now 😊

Absolutely loved this!
I'm usually a chocolate granola kind of girl but felt like I could use some change and was particularly intrigued by the addition of dehydrated mangoes in this one. I love the texture and the taste! I definitely will make it again :)
My boyfriend is usually not a fan of my homemade granolas because he finds them too sweet but really loved this one. Its sweet without being overempowering and I find that you can taste the roasted flavor profile much better than in a chocolate granola :)

Hi Anjali, a lovely question! We usually don't soak our nuts or seeds if we're roasting or baking them, and mainly soak them if we're just snacking on them as-is. Hey food lover, great Q, and I wouldn't advise it. Puffed rice or puffed spelt (or any puffed grain) would be a suitable alternative, otherwise, I'd consider simply omitting it. It definitely isn't necessary 🤓

I really love this recipe it has been a staple in our household for the last year. We enjoy it on its on or in yoghurt or smoothie bowls. I would just add that I mix it all in one bowl to save on extra dishes, dried ingredients first and wet second. And I also had the hemp seeds in before baking. Thanks for this great recipe. Are there any nutritional benefits from not toasting the hemp seeds?

Hi Stephanie, so glad it's being enjoyed, and thank you for the question. Roasting seeds can impact some of their nutrients, although they both still make for an incredibly wholesome choice. For example, some heat unstable nutrients such as B-vitamins and carotenoids are lower in roasted seeds than in raw counterparts. Heat stable nutrients, such as fibre, protein, and minerals tend to be similar between the two. Some other nutrients, such as phenols, flavonoids, and antioxidant properties may improve after roasting. We haven't tested this one out with puffed millet, but it's possible to use millet in place of the quinoa if desired. Either option for when to add it could work, but adding the puffed millet at the beginning and baking until the granola is golden brown may be easier. Lowering the oven temperature slightly, keeping a closer eye on the granola, and stirring it occasionally may help if your oven tends to be on the stronger side. Do let us know if you experiment with it 😃

Let me just say I am not a granola person. Nor am I a coconut or mango person, so I really don't know why I made this except that I watched the video and found dried mangos on sale at the grocery store. I figured my husband likes granola so what the heck. The aromas what filled my kitchen while baking were heavenly so when it was done I HAD to try some. I have one question regarding the toppings, I often hear people suggesting not to combine acidic fruits like berries with sugar fruits like banana. Could you please throw some light on that? So happy you're enjoying the granola, Karunya! We haven't seen very much research on food combining, although we haven't had a chance to look into it in depth.

We personally enjoy berries with bananas and find it can be rather wholesome. When possible, try to check the sources of such claims. Such as where are they getting this information from, is it a source that can be trusted, which research papers have they come from? It does require a bit of hunting sometimes, but it also helps you better decide which sources we can trust 😊

We have loved this granola recipe ever since I first made it and come back to it again and again! I always use puffed rice in the place of puffed quinoa as I cannot find it locally to where I live and I think the combo of two different grains within a granola recipe makes for a delicious change. I have always been a big fan of dried mango and last time I made this I also added in some chopped dried apricots which paired exceedingly well. Highly recommend!

This is now my go-to granola recipe! I usually do a combination of whatever nuts I have around (I prefer sliced almonds, pistachios for a pop of green, pumpkin seeds, chopped hazelnuts) and dried cranberries. I also like doing puffed rice instead of puffed quinoa. This granola also burns easily (may be my oven) but I had to do it 25F lower and take it out a few minutes earlier. The nut butter makes this such a decadent and satisfying granola without being too heavy.

Nice, crispy granola. It’s really pleasant to emphasise the deep, earthy flavour with almond butter. I manage still to get a good result without adding any brown sugar, which is a big benefit for me as a diabetic👏🏼
I didn’t have puffed quinoa, so I replaced it with rolled rye flakes. And I used dried apricots instead of mango. I think that this granola will be perfect for smoothie bowls with tropical or sweet sour fruits and berries 💡

This granola is so addictive! Because I could not find puffed quinoa and cannot have almond butter, I substituted kamut khorasan puffs and sunflower seed butter. Also, I used sunflower seeds in lieu of the almonds and pumpkin seeds, as well as agave for the maple syrup. Finally, I did not have brown sugar, so I just added about a quarter teaspoon of molasses to cane sugar. I could finish the whole thing by myself, it is that good!

Can i substitute the vegetable oil for coconut oil?
