Just made this. The taste is great, but sadly the color is not half as nice as it is on the photos. I was hoping for a bright pink, and got more of a light pink (and a dark red for the second portion I made with more beet, but there was way to much water in that one, so it was a mess). I don't have a food processor, so the beet sadly didn't turn completely smooth, which i don't really mind though, it still looks nice. But that's probably the reason for the color, too?
More importantly though, my cashew cheese turned way more gooey (?) than yours appears to be. I weighed the cashews in grams and did everything according to the recipe, but it came out extremely oily. It feels and looks a lot more like cookie dough, which looks really odd on top of the couscous. Do you have any ideas what might have happened there or how i can change it when i try again? I aim for that creamy texture in your photos.
The taste pairs really nice together, so I really do want to make this again.

Hey there, Hanni, thanks for trying the recipe and for the feedback! The colour difference is probably from the beet not blending fully, as chunks can dull the color a bit since you’re not getting that smooth, vibrant purée. It could also depend on how cooked the beets were - if they were cooked until just soft enough, they'd have a more vibrant colour than if they were cooked much longer until extra soft. Store-bought pre-cooked beets, for example, I find blend less vibrantly than home-cooked beets. The type of beet can also play a role, as some are naturally lighter or more earthy in tone.

For the cashew cheese, it is indeed meant to be a very thick, almost sticky texture. Like a very dense, soft cheese. That said, you could always try adding a splash of water or plant milk to help get a creamier texture. Sometimes, even an extra minute of blending can make a difference too! Hey there, Hope, thanks for the question! Each beetroot for us weighed around 100 grams when peeled and cooked, so that was about 200 grams total (give or take). I hope this helps! 😊

GF couscous can actually be pretty hard to come by in a lot of places. Is there something else that could be substituted into this recipe? Maybe millet?

Hey there, Sage, thanks for sharing your experience with gluten-free couscous. We haven't tested it out, but imagine millet could work. Unlike couscous, the millet will need to be cooked on the stove (with the bouillon cube added to the cooking water) - and simply cook until very soft. Then it can be mixed with the beet purée. Let us know if you experiment with it :)
