It’s alright but I did miss the salt
Loved it :) so fast to make. I used king oyster mushrooms. I halved the recipe for one portion and thought maybe it wouldn’t have enough liquid in the food processor, but the tofu came out just fine :) also used half the recommended miso like someone else suggested which I found was perfect amount for savouriness!
I love simple recipes like this for breakfast. They are filling and get some veg in you from the start of the day. I always find miso a strong taste, so I reduced that measurement to my preference and used about half the listed amount. Super quick and easy and I have the other portion ready to go for tomorrow! It looks such a gourmet dish too, so would be lovely to make if anyone is staying over.
The taste of tofu and nutritional yeast overpowered the rest of the spices for me and I didn’t love it. The mushrooms with sesame oil are my new favorite way of eating mushrooms so that was a win.
I was so skeptical of tasting the tofu spread - was literally wincing at the thought of raw tofu but was proven COMPLETELY wrong! This recipe is soooo delicious! I layered the spread and mushrooms into a pita bread instead of toast, added a bit of chili flakes and YUM - this is making it into my lunch rotation immediately!!!

How long does tofu spread keep in the fridge?
Really satisfying! I just mashed the Tofu with a fork and that way it felt a lot like cottage cheese. Also I added in some spinach into the paste. Delicious!!
This is such a quick and tasty recipe! I used a WildWood brand baked black truffle flavored tofu, which made the mushroom flavor pop even more! I needed to add a bit more liquid to get it creamy because the tofu was baked, but it was worth it. I would also say the radishes are necessary- a bit of crunch and freshness. I think I’ll try this same idea with other baked flavored tofus and have fun experimenting!
It needed some salt in the spread, but was yummy on some sourdough bread toast.
