Love this recipe! It's simple, but so delicious. I substituted the white vermicelli with some traditional south Indian vermicelli, despite my partner's skepticism :P, and I loved it! The dressing went really well with it.

Liked it much, even though my limes weren‘t super acidic and I forgot the edamame (added tofu instead). I also added Sriracha to and more soy sauce.
I don’t think this recipe scales well. I doubled it to make “4” servings, but it was way too much. The sauce was very acidic (a whole lime and 1/4 of vinegar).
So good! It is a tad on the sour side but I like it :) I added some shiitake mushrooms and a boiled egg to make it a bit more filling. My dad said it would be great with sweet BBQ chicken so for those who have family/partners who eat meat, you could pair it that way :)

The dressing turned out quite acidic, so I added a tablespoon tahini. All in all we liked it and it was very quickly done. Next time I would probably add more veggies (carrot and edamame).
I used bean thread noodles and they soaked up all the sauce. So if you’re using that style of noodle you’ll probably want to double the sauce. Perhaps if I’d chilled them first it wouldn’t have happened. But those noodles will keep soaking things up till they’re huge, so maybe you just need to wait until you’re actually eating to add the dressing. Doesn’t really matter because it’s all delicious either way. I also added some spice.
Made a version of this using soba noodles and added red bell pepper it was absolutely delicious!! The sauce is to live for!

Super tasty! Light and refreshing but hearty enough to be filling. It’s a super colorful too, it felt like a restaurant meal! I loved the crunchy texture of the vegetables contrasting with the softness of the noodles and edamame. I made the sauce without the sugar and it turned out great. This will be a great go-to meal for the future, thank you so much!

I am obsessed with this recipe!! I can’t stop making it when I’m not sure what to have for dinner. I used a thicker stir fry noodle because that’s all I had. Having this with the noodles cold is perfect for the hot summer days!
This turned out so so good! I didn’t have green onions which was a bummer but it still turned out great! I was thinking about chopping some peanuts and sprinkling them over top next time! Today was really hot so it was nice to have a meal that didn’t require turning on the oven!
