This recipe was inspired by the Indonesian dish "terong balado". In Indonesia, eggplants are called terong, and balado is a type of hot spice mixture. Sambal Balado or Sambalado originated from West Sumatra and means "with chili". It's no surprise to say that this dish has a very spicy kick, but is definitely worth trying if you're a fan of heat!

I was super excited to try this recipe, but the eggplants at my local grocery store looked past their prime. I ended up taking a chance and using portobello mushrooms instead. It worked great! I cut them a little bigger to make sure they didn’t burn, but I think they would have been fine cut smaller. The sauce was really delicious, kind of sweet and just a bit spicy. I’m sure the spice level will depend a lot on the brand of sambal oelek.

Really good! I have a convection oven so I turned the heat down to 180 C and stirred twice instead of once. Turned out perfectly.

Super easy to make. Perfect week night meal. I mixed the onion, garlic and the rest of the sauce ingredients in my mixer to get a smooth texture. Served with homemade pickled cucumber was a winner!

Loved learning about the origin or inspiration of this recipe. I made it with marinara instead of tomato paste and water and had to omit sambal oelek because my 18 month old will eat some too and we haven't brought her up to speed on spicy foods yet. 🍅🌶🧄🧅🍆🥫🍚🍛😋

I have no idea why mine didn’t turn out good 🙃😨 Was there supposed to be some salt and pepper? I followed everything to the T and it was just bland and unexciting .. I am sure it’s something I did, not the recipe… Tried 2 other recipes from the app and they turned out great! The food photography is just outstanding ☺️

I wonder if the eggplant you used might have been larger than ours? Our medium eggplants are usually around 500 grams in case it helps. So glad that the other recipes on the app are being enjoyed in any case. Happy cooking 🤗

Had a crazy day and made this for lunch because it simply involved one bake tray and some rice. Bonus was that I had all the ingredients. Came out great, left it in till caramelised a bit. However, I forgot to reduce the servings size and made way too much. So I tossed the left overs in the mixer with about 3 tablespoons of cooked quinoa and capers for a pate like sandwich filler. Really delicious. I ate it on toasty a slice of toasted rye sour dough, with vegan mayo and pickled beets, lettuce... a two for one recipe

Good, minimal effort yet tasty. Swapped the tempeh for tofu and Sambal for sriracha since it’s what I had. The idea of dump and go it’s genius and efficient but personally I would prefer pan fry the tofu separately to have a more crunchy texture.
