Doenjang (된장) is a Korean paste made from fermented soybeans. It has a deep, salty and umami flavour that is often compared to the Japanese miso paste. In this recipe, we combine it with gochujang, a spicy fermented paste that is made of rice and red peppers to create a deliciously cozy stew.

Usually Doenjang jjigae is made without gochujang and has lots of garlic. Doenjang paste has a unique earthy flavour and is stronger than miso paste. Take care that there are usually two versions (1 mild and 2 stronger) of doenjang in asian stores. This broth with gochujang is also very nice for ramyeon or dumpling soup. Love that you added Korean recipes <3

Love this dish! I used miso instead of Doenjang, tastes fabulous. I made the cucumber salad in the meantime and it was awesome. Cooking has been so much fun with PUL app, especially with the timer function!! Thank you Sadia! One thing I’m going to try is to add 4 cup of water instead next time, I like it less watery:)

Substituted miso paste for doenjang. I thought it was very tasty! Did not need to add more salt. Might add Bok choy or mushrooms for a heartier meal next time. I really loved how quick and easy this was!

Love this recipy! Added mushrooms and carrots for additional nutrition and some vegan mushroom seasoning for the extra umami flavor !
