1⅓ cups (243 g)cooked navy beans

¼ cup (66 g)tomato paste

½vegetable bouillon cube, crushed

¼ cup (60 mL)unsweetened soy Greek-style yogurt

2 Tbsp (19 g)pickled jalapeños , sliced

Directions
- Add the garlic and oil to a small bowl. Stir.
- Use a silicone pastry brush to brush the garlic oil onto both sides of the bread. Transfer the bread to a large pan on medium heat and allow to toast until lightly golden on both sides.
- To a small pan on medium heat, add the ingredients for the "saucy beans". Cook for 5 minutes, or until heated through.
- Spoon the beans over the garlic toast and serve with a dollop of yogurt and some pickled jalapeño if desired. Enjoy!

I didn’t find the idea of beans on toast very appealing, but I thought ‘you can’t go wrong with a Pick Up Limes recipe’. I was right, it’s a comforting and tasty recipe.

I've been making this when my husband and kids have pizza night. Today my 3 year old asked to taste my "pizza" and then proceeded to eat 75% of it. He was a bit angry afterwards: "Why are you to only one that gets the good pizza mom" So I guess I'll make two portions next time. Hopefully 4 in a year or so 😁

this is probably my favourite PUL recipe. i eat it every week. it’s super easy to make and i like to make a big batch to have some throughout the week. i can’t find chipotle adobo sauce at my supermarket so i use Cholula chipotle sauce! soooo good!!!
Made this for a quick bite and it was delicious! I grew up with beans on toast for breakfast but this recipe definitely takes it up a notch 👍🏼 love the chipotle spice in it.

One of the fastest and tastiest lunches ever! Interesting flavours and after seeing the picture, I was surprised that only tomato paste is used, with no canned tomatoes. It was also quite spicy especially with jalapeños which matched perfectly my knäckebröd that I used instead on the rustic bread. Highly recommended!

I use this recipe all the time with a baked (or smashed because it’s faster) potato and it’s the best weeknight wholesome dinner- highly recommend, especially with the jalapeños
We had this for lunch today and it was a hit! I had a hard time with the garlic burning before the bread would toast in the pan though- although I'm positive that's my own lack of experience with cooking. Definitely will make this again- quick, easy, cheap, and nourishing!
This was sooo good! Loved it, and so did our toddler. We are not used to such a big breakfast over here (Dutch), so we had it for lunch. I added fresh coriander/cilantro because I saw it on the photos, but later realized that it's not on the ingredients list. Flavor fits really well though. I think adding salad and avocado to have it as a dinner is quite nice too. Will try in the future.
Hello! I’m back at it again with veganuary and I have to say that I have made many of the recipes I tried last year all throughout the year. I really appreciate this recipe as I’m not overly an oats kind of gal (although I have really liked your recipes). This meal really surprised me. I thought it was a bit odd but dang it is so delicious. I didn’t have any yogurt and I ate it with pickled jalapeños (I love spice!) and added spinach. I am more of a sweet breakfast person but when Sadia mentioned she sometimes has this for dinner, I figured why not try it? I've made it a few times now for lunch or dinner (with some avocado as suggested to bulk it up a bit) and it's delicious! It's definitely worth it to make the tomato sauce from scratch rather than buying beans in tomato sauce, it doesn't take much time and totally elevates the dish, plus you can customize it to your own liking when adding the spices. I haven't tried it with pickled jalapeños yet, but will try it next time because it sounds like a great addition!

What a delightful upgrade to the classic beans on toast that I've known since childhood! I especially oved the chipotle flavours and addition of the creamy yogurt on top! 🤌🏻 I used cannellini beans as I was unable to find navy beans and they were great.

Oh, this was a delightful recipe! I'm continually learning in the kitchen, and I'm eager to share what's worked for me. I made it about 80% to the written recipe based on what was in my fridge/pantry, so here are my tweaks in case someone else in the same situation - I did not have any spicy sauce, so I used about 3/4 teaspoon smoked paprika, 3/4 teaspoon regular paprika, and 1/8 teaspoon cayenne. I bloomed all the spices in a bit of olive oil before adding the tomato paste, which I cooked down til it got darker. Maybe 3 minutes?
I had these weird tasting whole grain pita pockets that came frozen (Ezekiel brand, if anyone's curious), toasted those in the garlic olive oil til they got almost crunchy and they got significantly better tasting.
The pickled jalapenos add so much! Didn't have a jar of them, but I did have a regular pepper from the farmer's market hanging out in the crisper. I cut it up, boiled maybe half a cup to 3/4 cup (depends on the size of your container) of distilled white vinegar with 2 teaspoons sugar and a teaspoon of salt, and poured it over the pepper in a glass bowl. By the time the beans were done, my pepper was done pickling. (I'm a slow cook, lol)
If you have time, let the beans simmer on low for 20ish or more minutes so the flavors have more time to soak into the beans. Add maybe half a cup of extra water so the beans don't stick to the bottom (remember to stir!) Also, taste for salt and pepper.

I've always struggled with eating breakfast on a regular basis, but I can definitely see myself making this quite often. Really easy. Really yummy even with some ingredient substitutions.
Love this savory breakfast. Didn’t have canned chipotle so used a bit of chipotle hot sauce instead. So yummy!
So delicious and easy to make! I used cannelloni beans and bullion paste as that was what I had on hand and it was still very yummy. For my personal preference I would recommend adding a bit less tomato paste.
