I had been trying to incorporate more sweet potatoes into our diet because of its nutritional profile. This recipe fit the bill in spades. The contrast of sweet and savoy is great. It has allowed me to make larger batches of the fillings as the flavors are better the next day. The veggie ground is what I would call a taco or burrito filling. Having tacos one night and this recipe the next night, the flavors are so different that using the same filling is irrelevant. I have also topped it with chili or the burrito bowl fillings. This is definitely a keeper!!!

Perfection! It's super easy to make and very filling. I had to take a trip to a bigger store to get the veggie ground, beans, and vegan sour cream, but it was definitely worth it 👌

this recipe looos super interesting but im wondering what I can sub veggie ground with? it's not super available and whatever vegan ground is in store, it tends to taste like meat :(

Hey Shri, you can substitute the veggie ground with cooked lentils or finely chopped mushrooms for a hearty texture 🫶

C'est une recette délicieuse, n'hésitez pas à vite tester, c'est réconfortant, plein de saveurs (et facile à réaliser), j'ai adoré ! ( Et je n'avais pas de sour cream, ça fonctionne très bien avec du yaourt de soja à la grecque)

This looks delish! What can one substitute the adobo sauce for? I am in South Africa and I haven't been able to find any

Hey Kirstin, here in the Netherlands, it's in a jar called "chipotle sauce" at our local grocery store but it most similarly resembles adobo sauce for those based in the US. Ours is made from a blend of chipotle peppers with water, tomato, vinegar, and spices (no mayo in the ingredients). You can substitute chipotle adobo sauce for a hot sauce such as Sriracha or Tabasco 💛
