Brioche bread is made soft and tender thanks to the addition of butter to the dough. Traditionally, this French bread also contains eggs, but our vegan-inspired version is rich enough without them. These fluffy rolls are the perfect side dish or use them as a base for any of our burger or sandwich recipes.

Hiya, has anyone tried making these with honey instead? My partner can't have regular sugar. Do you think it would work?
PUL Team - Feb. 13, 2025, 7:30 p.m.
Hey Maria, we haven't tried so we can't say with certainty. Hope you enjoy the buns if you give them a try 🤗

Amazing buns!! Possibly the best burger buns I've ever tried. Incredibly soft and delicious.
At first they seemed on the smaller side but I paired them with the bean and oat burgers and their sizes matched well. But if you like bigger burgers I would advise maybe making 3-4 buns from this amount of dough.

Hey Dunja, thanks for sharing the glowing review and your experience with the buns! It means so much that they were enjoyed 🫶✨

Just made these 🥳 - I’m so glad you added the note with the butter - it didn’t seem right until I kept kneading (with the timer on!) … and it did finally came together. That extra note was a huge help. Thank you!

So happy to hear this, Lily, thanks for the feedback 😃
Adrienn - Jan. 27, 2024, 7:10 p.m.
I just made this today. My buns didn’t get much bigger than the dough I put in the oven. Could that be that the yeast is different than the one it was used in the recipes?
PUL Team - Jan. 29, 2024, 7:43 a.m.
Hey Adrienn! Did your yeast mixture ever get foamy? Did the dough rise or double in size during the rest period? If not, it's possible the yeast was not alive. Depending on where you live, the room temperature will also affect rising time. The dough might need more time to rise if it's been cold lately. You could place it somewhere a bit warmer to help the yeast activate. We hope this helps if you give the buns another try 😊

Delicious, but it'd rather say the recipe is for 4 buns instead of 6. Maybe I should've let them rise more, I don't know, I just followed the steps and ended up with kinda small buns.

Lovely! I made them with a stand mixer and I could have probably added an extra spoonful of flour, as the dough was quite soft, but despite that the dough worked and they turned out so well. Used everything seasoning for the topping. Delicious 😋

We're so thrilled that the buns were enjoyed, Suzy, thanks for taking the time to leave the review and share your experience with them ☺️
Aileen - Dec. 29, 2023, 8:15 a.m.
So I added the bread flour in the grams listed even though 2 cups of flour has always been 240 g to me. Therefore, I believe I may have added an extra quarter cup of flour as the dough was rather dry. I decided not to add any additional soy mylk as I felt the butter would help. The taste is wonderful, but they also came out rather small. I will do 240 g of flour next time and flatten the dough balls out a little as they look more like slider buns. They will certainly not go to waste though. They would work great as dinner rolls though! Yum!

Hey Aileen, thanks so much for taking the time to share your experience with these buns. For baking recipes such as this, we personally weigh the flour, so we weighed and used 274g. The difference you might be experiencing could be due to the fact that measuring cups can sometimes vary from brand to brand, or country to country. So you did well to follow the gram amount listed. With that said, flours can vary in their absorption properties from country to country. If the dough feels dry, as you experienced, don't hesitate to add a bit more liquid to achieve the right consistency. Adjusting the dough's moisture level can make a big difference in the final texture of the buns. It's great to hear they were still enjoyed!

I am gluten intolerant and I am always looking for good GF recipes. I decided to try this recipe and substitute the bread flour with GF brown bread flour 1:1. Of course I was not expecting similar look, I was just curious what will happen. And, I can gladly confirm that these turned out to be great gluten-free scones. I am really happy with the taste and the texture!

made these today and they were wonderful! they kind of felt excessively buttery while kneading (maybe because the butter was added late?), but they turned out fine - i still might use less butter next time, though. they were lovely as burger buns :)
PUL Team - May 30, 2023, 6:27 a.m.
Hey S, I'm so glad to hear you enjoyed it! Brioche is indeed meant to be rather buttery, so we've added a note to that step to let others know this is normal. If you keep kneading, the butter incorporates into the dough. If you still prefer to drop the butter next time, you can by a tablespoon or so without it affecting the texture too much 🤓
