I have a problem finding vegan butter in Croatia (if somebody can help with the information, please, let me know).

If I replace this butter with oil (coconut or sunflowerseeds), should I put a little bit less of it? How much indeed? 😊

Hi Marijana! We've made these crepes with a neutral-tasting vegetable oil and it worked! The texture and taste are different (butter gives a slightly richer taste), but it's an option. You could start maybe about 3 tablespoons (42 g) of oil instead of ¼ cup (56 g) of butter for the unscaled recipe 🤗

I was first very surprised by the texture of the batter that I found too thick. But I decided to still go with it. Once cooked (or is "backed"?) the crepes were really nice and delicious! It was also so quick to make!

I liked the taste of the crepes, but it was hard to make them. Could you please give me some pieces of advice maybe? I did let the batter sit overnight and rest outside of the fridge for 15 minutes. The frying pan was well preheated and I made use of my experience frying non-vegan pancakes, which I used to be good at. The better was unfortunately too soft, so that thin pancakes would tear when I was trying to lift them. So I did them thicker and smaller in size this time. The batter was also not too runny, which might have been the reason for tearing apart. In the end I just hope to be able to make a nice batch of vegan crepes to share with my family and friends.

Hey Dascha, thanks for giving the crepes a try! It sounds like you did everything right, but if the batter was too thick and the crepes were tearing, try adding a bit more liquid (plant milk works great) to thin it out slightly. The batter should be pretty thin - more thin than pancake batter for sure. Also, make sure to tilt the pan to spread the batter evenly and cook on a slightly lower heat to prevent tearing. A good non-stick pan can also make a big difference. With a bit of tweaking, I’m sure you’ll get the perfect batch to share with your family and friends! <3

Really great recipe! The crepes are soft and delicious. I'm impatient and don't usually let the batter sit and it seems to work just fine. Lemon and sugar, wow! So so delicious

Divine! As a Polish I missed naleśniki/crepes as the ultimate weekend treat your self breakfast. It’s our absolute staple and I was looking for a good recipe that wouldn’t require exotic ingredients like aquafaba (which I rarely have on hand). Delicious! I was impatient and didn't wait the 1 hour resting time, and it worked, but I think it would have been better if I had waited (bit of sticking to the pan). Guess I will just have to make them again tomorrow 🙃🙃 very simple and loved the lemon and sugar topping.

Hey Maria, oh no! Are you using vegetable oil to lightly grease the pan? This is important to help the crêpes not stick since they're quite thin. It can also help to preheat the pan before adding the batter. We hope you enjoy the recipe more if you give it another try 🙂

Hi! On a gluten-free journey here. I love that there are swap-options, but when the recipe doesn’t have a swap-symbol does that mean gluten free flour will not work?

Hey Marlo, we're so glad the swap function is helpful! If you press the red gluten button when no swaps are offered it will point out which recipe ingredients include gluten (such as all-purpose flour in this case). Sometimes it's because the recipe is more delicate and we haven't had the chance to test it out with a gluten-free alternative (such as gluten-free flour). Other times it's because the ingredient doesn't have a traditional substitute (such as semolina). If you experiment with gluten-free flour in the crêpes we'd love to hear how it goes 🤗

Hey there, Lavanya, thanks for the question. This crêpe batter indeed has a touch of sweetness from the sugar. To make it better suited for savoury crêpes, you can simply omit the sugar and reduce the salt slightly - we haven't tested it personally yet but we're quite confident it should work just fine that way ☺️ Let us know how it goes if you give it a try!

We make crêpes a lot in our house and have experimented with lots of versions including tonic water and flour and also just flour, water and ground flax seeds. Both these combinations work well for savoury crêpes. We've never actually added sugar and butter so it will be interesting to try this recipe. We also normally don't measure the ingredients and go by the consistency - gentle coat and dribble off a wooden spoon.
In the UK, where we come from, crêpes are our normal pancakes.

Very good, a bit buttery to my taste though.
I understand the idea with butter is to replace the fat of an egg yolk, to make the crepes more tender and coat the gluten with fat, and also kinda recreated the fluff that we find with egg when the crepe cooks, so it makes the batter less dense, but it also makes it heavy in the taste.
I don’t know where is the right balance though. In other vegan recipe with less butter, the taste is good, but the texture is meh. The taste of this recipe is too buttery but the texture is perfect.
So I really don’t know how to improve it ! Just sharing the opinion of a French woman who really loves crepes haha

Hey Alice, you'll see in step 1 that the batter needs to rest for 1 hour in the fridge - this helps to hydrate the gluten so that it's more flexible to stretch into a crêpe shape. I hope this helps, and I hope you enjoy the recipe if you give it a try! 😊
