Vegan Sloppy Joes

50 min

Main

Sloppy Joes are popular comfort food and very well known and loved in the US & Canada. The story goes that a cook named Joe, working in Sioux City, Iowa created this sandwich back in the 1930s. This meal is usually made using ground beef, so we created our own vegan version of this classic sandwich, but using wholesome, filling, and protein-packed lentils instead - we hope you will love it just as much as we do!

  • 1
    vegetable bouillon cube
  • 1 Tbsp (6 g)
    ground cumin
  • 1 Tbsp (7 g)
    paprika powder
  • ½ Tbsp (3 g)
    ground coriander
  • ½ Tbsp (2 g)
    dried oregano
  • ¼ tsp
ground black pepper, plus more to taste
  • 1
    red bell pepper, finely chopped
  • 3 cups (540 g)
    cooked brown lentils
  • 1¾ cups (420 mL)
    passata sauce
  • 1 Tbsp (15 mL)
  • 1 Tbsp (15 mL)
  • 1 Tbsp (15 mL)
    hot sauce
  • 2 tsp (10 mL)
    dijon mustard

Coleslaw

  • 1 cup (70 g)
    shredded red cabbage
  • 1 cup (64 g)
    shredded green cabbage
  • 1
    carrot, grated
  • 2 tsp (10 mL)
  • ¼ cup (60 mL)
  • 1 tsp (5 mL)
    dijon mustard
  • ¼ tsp
    salt
  • ⅛ tsp
    ground black pepper

Assembly

  • 5
    burger buns, toasted
  • ⅓ cup (80 mL)
    vegan mayonnaise (optional)
  • 1 cup (35 g)
    romaine lettuce

Directions

  1. Heat a sauté pan over medium-high heat. Add the oil, onion, and garlic. Cook for 3 - 4 minutes, or until translucent.
  2. Crumble in the bouillon cube and add all the herbs and spices. Cook for another 1 - 2 minutes, until everything is fragrant.
  3. Add the remaining filling ingredients. Cook at a gentle simmer, uncovered, for 7 - 10 minutes for the mixture to thicken.
  4. Meanwhile, mix together the coleslaw ingredients in a bowl. Taste test and add more mayo or vinegar if desired.
  5. Spread some mayo on each half of the toasted burger buns. Add the lettuce, pile on plenty of the lentil filling, and top with coleslaw.

Notes

  • Passata is a smooth, thick tomato sauce made from strained tomatoes without added seasonings, herbs, or spices.

Storage

  • Assembled sandwiches are best enjoyed immediately.
  • The lentil filling and coleslaw can be stored separately in airtight containers in the fridge for up to 3 days.

Really yummy

Freyha - Sept. 8, 2024, 8:05 p.m.

The combination of sweet, sour and umami taste is great.
Next time we will try it without the bellpepper because for us it's to dominantly in this dish.

Delicious! Makes heaps

Leila Daniel - Sept. 5, 2024, 4:37 a.m.

So incredibly satisfying! Another fantastic recipe. We enjoyed it even without the coriander and cumin (ran out!). The cole slaw was delicious by itself too!

C.D. - Sept. 2, 2024, 10:32 p.m.

I was so excited to try this recipe b/c sloppy Joes are nostalgic for me but the flavor profile is missing something. I had to sub vegetable seasoning for vegetable bouillon b/c I couldn’t find one without msg. It still tastes good but I’m missing that sweet, tangy flavor of the real thing.

PUL small logo PUL Team - Sept. 4, 2024, 7:25 p.m.

Hey C.D, thanks for trying out the vegan sloppy joe recipe! We imagine the vegetable seasoning was less mild than vegetable bouillon which tends to be more concentrated. In case it helps, to boost that sweet, tangy flavour, you could add a bit more maple syrup, a splash of apple cider vinegar, or a touch of ketchup. That should help bring back the nostalgic taste you’re craving 🤗

C.D. - Sept. 5, 2024, 4:44 p.m.

I will try that! Thank you.

Sandy - Aug. 25, 2024, 12:15 a.m.

Made this for a measurement of 2 people. It turned out to be for 5 people. I used gourmet hamburger buns. Toasted it with butter along with mayo and melted vegan cheese on it. It is a very filling dish.

Jill - Aug. 19, 2024, 1:23 a.m.

Ok this recipe is SO GOOD!!

Anna - Aug. 17, 2024, 4:03 p.m.

One of our go-to weeknight dinners! Pre-cooking the lentils and having them ready to go makes weeknight meals a breeze. Homemade whole wheat sourdough rolls make these even more delicious than they already are!

Rob - Aug. 14, 2024, 8:37 p.m.

I've never had a Sloppy Joe before, so this was fun to try - I can see how it got it's name 😂 I love using lentils as a base for anything meaty and this was really tasty. The slaw was the perfect topping too, so don't skip that! Really easy to make and it makes plenty so it'd be good for a meal prep idea too.

Aww so glad that the vegan sloppy joes were enjoyed, Rob!

M - July 13, 2024, 2:23 p.m.

So excited to try this! What is the measurement of 1 serving? Thanks.

PUL small logo PUL Team - July 13, 2024, 8:25 p.m.

Hey M, we hope you enjoy the recipe! The measurement of 1 serving is for 1 sloppy joe. We don’t have a more precise measure, such as the grams or cups, because it can vary. For example, the weight may be more if vegetables are larger or less if the dish simmers for longer and liquid evaporates 😊

Nikki - July 9, 2024, 3:19 a.m.

Made this for dinner and loved it!

Flavourful and messy. Love it.

Made these with homemade buns, homemade air fl-fried fries and it was all a hit!

[email protected] - June 27, 2024, 4:21 a.m.

So good!

I added 1 tsp of vegan Worcestershire sauce and subbed a vegan beef flavoured bouillon instead of veggie.

Norma Afif - June 20, 2024, 10:09 a.m.

Another winner 🥇

Sam - June 18, 2024, 1:40 a.m.

I liked this recipe a lot! I made a few tweaks: left out the maple syrup and added some pickled jalapenos along with the red pepper! Would definitely make this again 🥰

I also maybe made too much for just me and will freeze half of it

PUL small logo PUL Team - June 19, 2024, 8:59 p.m.

Mmm love these ideas, Sam, thanks a bunch 🤗

Jen - June 12, 2024, 1:53 a.m.

These are so delicious!

Kate G - June 5, 2024, 12:46 a.m.

These are great (and I'm not usually a fan of lentils). Definitely make the slaw too(and maybe make extra slaw sauce too). I almost skipped it and am so glad I didn't. Thank you!

Thanks for taking the time to share your experience with the sloppy joes, Kate 😃

Wow 🤩 the family was all jokes about a vegan sloppy Joe until they were asking for seconds and if they could pack the leftovers in their lunches 😂 even my 5 year old gave this 2 thumbs up 👍🏽

PUL small logo PUL Team - May 30, 2024, 3:35 p.m.

Awe such a big compliment, Michelle! Love to hear when the whole family enjoys a meal 😊

Nora - May 26, 2024, 7:04 a.m.

A+ summer meal! Just had some friends over and made these and they were a HIT. Absolutely delicious. We each ate one and immediately wanted a second but were too full. I will definitely be making these again and again. Am considering adding some finely chopped/crushed walnut to the pan to simmer with everything next time for an added textural element, but it’s not a need, just a want.

Charlotte - May 24, 2024, 12:47 a.m.

Oh my goodness, these were so delicious! They were my first time trying Sloppy Joe's and I can see what I've been missing out on! I swapped the lentils for crumbled extra firm tofu and they worked a treat. The way the filling paired with the homemade slaw was next level. 5 star all around (especially as I made the PUL Garlic & Basil Potato Wedges on the side!).

PUL small logo PUL Team - May 24, 2024, 11:23 p.m.

Mmm sounds incredible, Charlotte, thanks for taking the time to share your experience with the sloppy joes 🤌

Nour Dukmak - May 23, 2024, 4:23 a.m.

These remind me of my childhood sloppy joes. My mom would make them with lentils, too. So good!

PUL small logo PUL Team - May 23, 2024, 9:51 p.m.

Aw love it when we have personal connections to recipes 🥰 thanks, Nour!

Jamie R - May 21, 2024, 11:39 p.m.

*chef’s kiss* 🤌 This recipe is perfect! The ingredients for the lentil sloppy Joe mixture are perfect + made me so nostalgic! That paired w/ the slaw - incredible! I see what the hype is about + this will be devoured quickly. 10/10 💟

PUL small logo PUL Team - May 23, 2024, 3:16 a.m.

Woohoo! So thrilled to hear this, Jamie 😊

Carla Poot - May 20, 2024, 7:20 p.m.

I like the filling. It can go very well on its own as a lentil stew or fill little gem leaves with it.
Next time I’ll try adding some vegan ground “beef” to the lentils for some crunchy texture

Em - May 14, 2024, 1:40 p.m.

Pretty good. Straightforward to make and good flavor.

Oh wow! A lovely idea to use red peppers from a jar 🙌 sending lots of love to Ireland, Lily 🫶

Abby - May 12, 2024, 11:08 p.m.

Hi! Do you think TVP be used instead of lentils?

PUL small logo PUL Team - May 13, 2024, 1:38 a.m.

Hi there, Abby, yes we imagine you can use TVP as a substitute for lentils. Just be sure to rehydrate the TVP before adding it to the recipe and adjust the cooking time as needed 🙂

Tina - May 12, 2024, 2:50 a.m.

Very good and quick to make with canned lentils. Used napa cabbage and carrot for the coleslaw. Wonderful flavors-thank you!

Melissa - May 11, 2024, 10:34 p.m.

SO GOOD. (And also so sloppy! Have napkins ready.🙂) I usually don’t like lentils much, nor am I the biggest fan of slaw, but I was pleasurably surprised at how much I loved this recipe. It all worked together so nicely and was incredibly flavorful and balanced. Couldn’t put it down! Definitely will be making again.

And like someone else said: if you can find pre-cooked lentils (and even a bag of pre-shredded slaw mix), this recipe will come together much faster than the estimated time .

PUL small logo PUL Team - May 15, 2024, 3:18 a.m.

Thanks for the glowing review and for taking the time to share your experience with the recipe, Melissa! So glad the sloppy joes were enjoyed 😊

Okay wow this was 🔥!!

Tanya Vincent - May 11, 2024, 3:43 a.m.

I agree...holy moly! I was out of coriander and omitted the hot sauce as my hubby and I can't do spicy, but these were fabulous! A blast from the past, tasted just like sloppy joes from my childhood 😊

PUL small logo PUL Team - May 13, 2024, 3:18 a.m.

Aww love it when we have personal connections to recipes! Thanks a bunch, Tanya 🙂

Amanda - May 10, 2024, 8:25 p.m.

What else can I say but holy moly?! I’ve made vegan sloppy joes before but this recipe is insane! Comes together so quickly with pre cooked lentils. Absolutely delicious. Can’t wait to see if the kiddos like it as well. Didn’t have red peppers but added celery instead. Thank you.

PUL small logo PUL Team - May 10, 2024, 9:31 p.m.

Yayy so happy to hear the sloppy joes were enjoyed, Amanda 🥰
