Ingredients

Vegetable pancake

  • 4
    stalks green onion, sliced
  • 1
    zucchini, cut into matchsticks
  • 1
    carrot, cut into matchsticks
  • 1
small sweet potato, cut into matchsticks
  • 1
    small onion, thinly sliced
  • 1
    jalapeño, thinly sliced (optional)
  • 1½ cups (207 g)
    all-purpose flour
  • 1½ cups (360 mL)
    water
  • ½ tsp
    salt
  • 3 Tbsp (45 mL)
    vegetable oil, for frying

Dipping sauce

Optional garnish

  • toasted sesame seeds
  • sliced green onion

Directions

  1. Prep the veggies and add them to a large bowl*.
  2. Then add the flour, water, and salt. Stir to combine.
  3. Add a splash of oil to a large pan over medium-high heat. Add a third of the batter to the pan and spread it out into a thin layer**. Cook for 3 - 4 minutes, or until the bottom is golden.
  4. Meanwhile, make the dipping sauce by combining the ingredients in a small bowl. Set it aside.
  5. Returning to the pancake, give it a flip. If desired, add more oil to the side of the pan and give the pan a swirl so it reaches the bottom again. Cook for an additional 3 - 4 minutes. Then repeat with the remaining batter.
  6. Slice up the pancake, garnish, and serve with the dipping sauce. Enjoy!

Notes

  • Our zucchini weighed 235 g.
  • Our carrot weighed 139 g.
  • Our sweet potato weighed 117 g.
  • Our onion weighed 63 g.
  • Gochugaru is made from Korean dried red chili peppers. Red chili flakes can be used, but are spicier than gochugaru.
  • * Ensure veggies are sliced into matchstick-thin pieces or thinner for proper cooking. For the original recipe, which yields 3 pancakes, the total volume of the prepped veggies should not exceed more than 6 cups.
  • ** The original recipe makes 3 pancakes. Adjust the amount of batter added if you've scaled the recipe.

Super easy to make and very versatile. I just used the veggies, that were in my fridge (swapped the sweet potatoe for some savoy). It was a delicious meal and I think it’s great for meal prep too.

Mmm love how you made the recipe your own, Tine, thank you 🤗

Tricia Scott - Nov. 24, 2024, 3:54 p.m.

Nice snack, and the dipping sauce is a must. I'd double or triple the suggested quantity of sauce.

renata - Nov. 16, 2024, 12:38 p.m.

Naudojau puse puodelio garam masala, nes tai buvo mano pusruciai. Puodeli miltu. Papildomai tarkavau ketvirti kopisto. Piltu ir vandens santikis palikau koks buvo isejo viskas gerai.

Mehmet - Oct. 11, 2024, 7:07 p.m.

This easy dish tastes so good with the soy sauce dip and extra jalapenos. Love making this for friday evenings.

gabrielle epstein - Sept. 29, 2024, 12:06 a.m.

The ease of making to delicious ratio is maximum! I used a mandolin and the whole thing took no time. Even my fussy children devoured them. I omitted the chilis and chili powder for the sake of the kids then served with sambal olek on the side to stir into the dipping sauce. I gave my husband a sample and he said “Oh my god!”

PUL small logo PUL Team - Sept. 29, 2024, 5:57 a.m.

So glad to hear it was a hit with the whole family! Love how you customized it for the kids while still keeping the spice on the side for the adults, Gabrielle 🤗

Misaki - Sept. 24, 2024, 9:13 p.m.

Can we substitute all purpose flour with whole wheat flour or gramflour instead?

PUL small logo PUL Team - Sept. 25, 2024, 4:50 a.m.

Hey there, Misaki, we haven't tried but we imagine you can swap all-purpose flour with whole wheat or gram flour with some experimenting if you're up for it. Whole wheat will give a denser texture, while gram flour adds a nutty flavour and extra protein. You'll likely need to adjust the water to get the right consistency 🤗

Une réussite j'adore !😍

Linda Fe - Sept. 6, 2024, 8:37 a.m.

What a tasty way to use a variety of vegetables!

Simple, cheap and delicious…amazing

Absolute banger of a recipe! 😍🤩

Michala - Aug. 13, 2024, 8:35 p.m.

Getting these crispy has been a challenge for us, however, they are tasty regardless. Easy way to get in a lot of veggies!

Tessa - Aug. 13, 2024, 3:56 p.m.

Haven’t quite hacked how to make the pancakes crispy. Mr google suggests I use cold water (or even cold soda water) and potentially replace some of the flour with cornflour. Worth experimenting with next time!

PUL small logo PUL Team - Aug. 14, 2024, 3:22 p.m.

Hey Tessa, thanks for the tip and for sharing your experience with the pancakes! It could also help to make sure the pan well heated before frying 🤗

jenny - Aug. 2, 2024, 6:19 p.m.

So I made a variation of this by grating my veggies and it turned out great. More like a potato pancake but I loved the crunch.

Maxine - July 31, 2024, 2:55 a.m.

The flavours of this pancake were truly delightful. While I didn't have the exact mix of vegetables the recipe called for, I substituted with what I had in similar amounts, and it turned out wonderfully. I'm sure you could use almost any combination of vegetables, and it would still be delicious. My pancake held together nicely, as I cooked it in a non-stick pan with a thin layer of cooking spray.

PUL small logo PUL Team - July 31, 2024, 2:32 p.m.

Woop woop! Love the modifications and that the pancakes were enjoyed, Maxine 🫶

Nicole Mostofa - July 25, 2024, 12:47 a.m.

Lots of slicing! So a good knife and good grip on the knife is essential. I love this stuff. Did need to fry for longer than receipe specs. 🥢

PUL small logo PUL Team - July 25, 2024, 1:16 a.m.

Thanks for sharing your experience with the pancakes, Nicole 🙌✨

Lia Silva - July 23, 2024, 3:42 p.m.

How delicious and so easy to make!!! And I didn’t even have all the ingredients 😄😄 Highly recommended 👌🏼

Mehmet - July 17, 2024, 8:13 p.m.

This was perfect for a hot summer evening dinner side. Love your platform and creativity. Keep sharing <3

Erin G - June 23, 2024, 7:43 p.m.

Very delicious and the sauce is fantastic! I did it without the jalapeño and with the sauce it was the perfect amount of heat for me.

Kristi - June 12, 2024, 12:46 a.m.

So I am not sure what I’m doing wrong. The flavor is great but for the life of me I cannot get these to turn out as anything other than a total mess. I’ve tried small pans, large pans as suggested, cast iron, hexclad, these will not stop sticking for me, I’ve cooked them at the suggested temp for the suggested time, let them go longer, made sure everything was in matchsticks, used a fair amount of avocado oil to coat the pan. This is super yummy, but we’re eating it like a soggy hash and I’m not sure what’s up. Any suggestions? The flavors are so good I want to enjoy it at its full potential.

PUL small logo PUL Team - June 12, 2024, 6:26 a.m.

Hey there, Kristi, we're glad you're enjoying the taste of the pancakes despite the hiccups with the texture. It could help to turn down the heat a touch and pre-heat the pan so it's warm before pouring the batter. You could also try another type of oil instead of avocado oil, such as a general vegetable oil. Another tip would be, if using a non-stick pan (which we recommend), to not use as much oil, as the pancake will absorb the oil and may make it soggy. Do let us know if this helps!

Isabella S. - July 29, 2024, 3:32 p.m.

Hi Kristi,

same mess with me despite I used general vegetable oil and a non stick pan. I am now making smaller patties and it turns out better (still not optimum).

Kristi - Sept. 8, 2024, 1:52 a.m.

Ok, so we gave it another try and had more success! Thank you PUL Team for the suggestions! What worked for us was using less oil, preheating the pan for a LONG time AND making the pancakes MUCH smaller than our original attempts. We needed ZERO chance of the batter touching any part of the side of the pan, during the initial pour, flipping process and cooking of the other side. I also think we were crowding the pan earlier so things were getting steamed and soggy instead of crispy. We also needed to cook each pancake for longer than the suggested time. We love these now!

Kristi - Sept. 8, 2024, 1:54 a.m.

And thank you Isabella S. for the smaller pancake suggestion!

Martunia - June 4, 2024, 9:59 a.m.

Chopping the veggies is an absolute chore, but the result is worth it! Thank you for putting down the exact weight of all the veggies, which was very helpful for achieving the best tasting pancake and avoiding sogginess.

PUL small logo PUL Team - June 5, 2024, 12:36 a.m.

So happy to hear the chopping was worth it and the weights were helpful, Martunia 😃

Nike Unverhau - May 23, 2024, 10:19 p.m.

Super tasty!! Takes some time to prepare the veggies, but other than that its really simple! Will definitely make it again :)

Yug vyas - May 16, 2024, 10:10 p.m.

Absolutely love this

Josefine - May 13, 2024, 10:09 a.m.

We loved it!!

Manuela Suciu - May 12, 2024, 10:06 p.m.

Loved it ❤ huge hit in our house and for our guests. Definitely gonna make it again.

Noomi Kifarkis - May 10, 2024, 4:53 p.m.

Very tasty, but mine turned out quite soggy. Not sure what I did wrong. I used a well-heated cast iron pan with rapeseed oil and used the timer, 3 min or more on each side.

verena - May 9, 2024, 9:51 p.m.

Wow, we loved those! Had them with vegan mayo :)

Holly - May 9, 2024, 12:21 p.m.

So tasty and surprisingly crunchy! 😍

Athina - May 9, 2024, 9:53 a.m.

Delicious, simple ingredients, loved it!

Kris - May 6, 2024, 12:17 p.m.

Wooow loved it!

Phillipa - May 6, 2024, 9:38 a.m.

Huge hit in our house. I think next time I will put the first ones in an oven to keep warm while I cook the others. The first was fab but the texture got softer by the last one (still tasted great) - I think it had more liquid than the first.
The sauce will be something I make separately for other dishes. It was so good!
We served them with baked edamame beans and nori fries. It felt a bit like tapas. ☺️

PUL small logo PUL Team - May 7, 2024, 12:46 a.m.

Hey Phillipa, thanks a bunch for sharing your experience with the Korean Vegetable Pancakes! A lovely idea to keep them warm in the oven 🙂

Emily - May 6, 2024, 3:16 a.m.

these are really crispy and delicious, great to use up any random veggies!! will definitely be making again :)

Kade - May 2, 2024, 6:22 p.m.

my sticks were thick so it didn’t cook as well. i wonder if i can grate veggies instead of cutting them? is that allowed?

tastes amazing, cooked it for a movie snack haha

PUL small logo PUL Team - May 3, 2024, 12:23 a.m.

Hey there, Kade, we imagine you could grate the veggies for a slightly different texture in the pancakes. Just be sure to squeeze out any excess moisture from the grated veggies before mixing them into the batter as they'll be more wet. Sounds like a fun movie night snack! 🙌

april - May 1, 2024, 8:12 p.m.

SOOOO good! What a brilliant way to use up veggies!

Maggie - May 1, 2024, 6:04 p.m.

So it stuck badly to the pan, even though I used the oil, and turned out in blobs instead of a nice flat pancake. Next time I will try small latke shapes for easier flipping. But the flavours were amazing, especially with the sauce, ensuring there will definitely be a next time!

PUL small logo PUL Team - May 1, 2024, 7:10 p.m.

Hi there, Maggie, thanks for sharing your experience with the pancakes. In case it helps, making sure the pan well heated before frying can work wonders to help the pancakes flip more easily 🙂

malik - April 30, 2024, 10:43 p.m.

Good but make sure to cut the vegetables very thin too ensure even cooking in the pan :)

Juna - April 30, 2024, 10:32 p.m.

Had to try it right when in came out. Really nice, crispy on the outside, soft in the inside. I also included some white miso paste in the batter to give it more taste. Just one question: how many tablespoons of oil would you use for one pancake? The recipe says 3 in total, so does that mean, for each pancake 0.5 tablespoons per side?

PUL small logo PUL Team - April 30, 2024, 10:48 p.m.

Hey Juna, love the idea to add white miso paste to the pancakes! For the oil, indeed we used around 0.5 tablespoons per side. We splashed the oil into the pan rather than exactly measuring so a touch more or less it totally okay 😊

Fantastic recipe, my family really enjoyed this. I snuck in any extra veggies I needed to use up as well. This will definitely become a regular in our house

PUL small logo PUL Team - April 30, 2024, 8:53 p.m.

Love that you could use up extra veggies and so glad the pancakes were enjoyed, Natalie!

Suzi - April 30, 2024, 5:11 a.m.

I don’t like green onions, so can I replace with another vegetable 🥕

PUL small logo PUL Team - April 30, 2024, 10:46 p.m.

Hi Suzi! You could try leeks or chives for a similar texture but a milder taste 😊
