Lemon turmeric hummus

1 Tbsp (15 mL)extra virgin olive oil

¼ tspcurry powder (optional)

¼ tspsalt, or more to taste

Directions
- Optional step: preheat the oven to 475°F (250°C)*. Cut the lemon in half and place cut-side up on a lined baking tray. Bake for 10 minutes, then allow to cool.
- Add the roasted lemon juice, along with all the remaining ingredients to a food processor and blend until smooth.
- Taste test and adjust the seasoning to your liking. Plate, garnish, serve with crackers, cut-up vegetables, or enjoy in a wrap or sandwich.

- * We used top and bottom heating (not fan-assisted/convection).

- Store in an airtight container in the fridge for up to 5 days.

That color is everything 😍 I think it's worth adding 1/4 tsp salt more than in the recipe, but maybe it depends whether your curry spice has salt in it already. Also, I'm not sure if broiling the lemon makes much of a difference. I did it and honestly I can't taste the lemon any differently.
Probably best to add a pinch of pepper to get the most out of the tumeric. I love the flavour and the colour.

This hummus is so amazing. It really is a beautiful blend of flavors that you will not find in any store bought variety. This is one of those dishes that really are better when you make them yourself and the flavor combinations for this hummus just can’t be beat.

For anyone unsure how to "cook chickpeas"- I boiled 1 cup dried chickpeas in 2/3 tsp baking soda and alot of water. I boiled it for an hour and half until very soft/mushy :)
Just made this and it is absolutely delicious! I added a small handful of baby spinach in there too because why not.

I made this hummus on the weekend and had it in my wraps and on my roasted veggie bowls and it was really nice! It's a nice alternative to the traditional hummus recipe I keep making. Thanks!
This hummus is interesting and spicy (not hot, but aromatic!) in a good way. I was actually more sceptical about the lemon flavour, which became too bittersweet for me, than the turmeric. I used cumin instead of curry powder to maintain a classic hummus flavour in the background
