This recipe is our take on the classic French stew “beef bourguignon”. From the region of Burgundy, the dish is characterized by an incredibly rich, deep and glossy red wine sauce imbued with French flavours. This vegan version features jackfruit, which pulls apart and integrates beautifully into the sauce. Still, for a higher protein content replace the jackfruit with mock beef shreds. It will be just as delicious!

I've never tried the meat version of this dish but I liked the jackfruit version a lot! This year I think I've finally been nailing marinating and cooking jackfruit well to get rid of the briney taste for the first time and it's a great feeling! I love the idea of adding tempeh for extra protein (spotted in the comment below 👀).

Well done team. It was great!!! I graded 1 block of tempeh, added it to the jackfruit to marinate (for extra protein) and served it over mushed potatoes. The whole family loved it. It will be part of the rotation now.

It was soooo delicious. At first I was sceptical, because I don't really like wine. But you could not taste the wine. Sadly I couldn't find jackfruit so I jused soy "Hack". And this was sooo tasty that I will propaply do it this way again.

Way back in the day (pre-vegan), I made actual beef bourguignon, which is a >4hr process that requires a great bit of dedication. This version somehow captures the essence of the original while being (a) way more wholesome and (b) quite fast comparatively (also way cheaper). I weirdly didn't have soy sauce (or liquid smoke) but did have fermented soybean paste (doenjang) so I marinated in that instead (with the maple and pepper) and had no issues!

Saadia and PUL Team, I’m a long time app and recipe user and commenting for the first time.

I feel like this would be great in a pressure cooker/instant pot. How would you adjust the recipe? Simmer the garlic, onion, and carrots then throw in all the ingredients? A slow could work too, but I’m trying to safe time.

Hey Yaman, thank you for the support 🥰 We haven’t tried this recipe in a pressure cooker, and to be honest we don't have a lot of experience working with them. We imagine you could sauté the garlic, onion, and carrot using the sauté setting. Then, add all other ingredients except the potatoes and cook on high pressure for 10–12 minutes. This keeps the potatoes from becoming too soft, and you can cook them separately or add them halfway through if your pressure cooker has a quick-release option. To finish, simmer with the marinated jackfruit until the stew is thickened to your liking. Let us know if you test it out!

It turned out delicious! I sautéd the garlic, onions, and carrots like we chatted about, then added all the ingredients to the pressure cooker. I cooked on high pressure for 7 minutes while I cleaned and diced 2 russet potatoes. After depressurizing, I added the potatoes and cooked on high pressure for another 5 minutes. It was so easy to cook and “set and forget.” It also technically made this a one pot meal :)

The only change I made was adding 1/2 cup of vegetable stock at the beginning which made it more watery than I wanted. Maybe 1/4 cup of extra liquid would be perfect.

This was one of the most delicious things I’ve eaten in a long time. I didn’t have the liquid smoke or pearl onions but I don’t think it mattered. Yum yum yum!

Really delicious! I adjusted the salt to be less after reading the reviews and it was perfect. I couldn’t find pearl onions but I used shallots and they worked well. Also tasted good with alcohol free wine.

This is an absolutely delicious recipe! The only change I made was substituting the vegetable bouillon to a vegan “beef” one. I also wanted to add some extra flavor to the side potatoes, so we did the PUL Garlic Basil Potatoes. I would certainly make this recipe again, but I’d double it!

I will be making this dish this week, but I am not sure which wine to buy. I don’t drink or have ever used wine in cooking. Therefore, I am clueless on the type of wine to buy. I see Merlot, Pinot Noir, Cabernet, etc. Which would work best as a dry red wine in this dish? Thank you!

Hiya Aileen, the classic Boeuf Bourguignon features Burgundy wine, which is made from Pinot Noir grapes. But any other dry red wine like Merlot or Cabernet Sauvignon will provide the dish with that rich, pronounced flavor; so you could choose one or the other based on what's available or more affordable perhaps! Delicious and tastes like it’s not plant based! I doubled the carrots, added zucchini and only used dried herbs and was still tasty. Will definitely make again, great dish for winter

Made this after a long day at work. The only part that was iffy was the jackfruit. I got the canned young jackfruit from the Aroy D brand (Thailand). I rinsed it twice, and it was still salty. To adjust for that, I would add half the amount of soy sauces.

Hey Liza, absolutely! You can prepare the dish in advance and store it well-sealed in the fridge until you're ready to serve. It should stay fresh for up to 3 days, though I recommend enjoying it within a day for optimal freshness. Stews often improve in flavour as the ingredients meld together, so it may even taste better after a day. When you're ready to serve, just reheat it gently on the stove. Enjoy! 😊

I agree with everyone else - this was amazing. I doubled the tomato paste and threw in 2 carrots rather than one but they were just tiny tweaks. Served with some broccoli for greens and #perfect

I've had a can of jackfruit for over a year because I don't like it that much. This recipe changed that! It's umami on steroids. I used vegan Worcestershire for dark soy and left out the pearl onions. Just fab.

Oh my goodness, the other guys reviews were not wrong, and shallots worked really well. I added vegan beef shreds as well as Jackfruit as I wanted to use them up. The flavours were amazing. I was dying to make this as soon as it came online, and wow, it did not disappoint. What a wonderful dish with depth of flavour. I can't wait to show this one off to other people. It was quite difficult though to find the pearl onions. If there is an acceptable alternative I would like to know (small shallots cut in quarters?)
