This gnocchi turned out great! I used homemade cashew cream instead of soy, and it worked perfectly. The flavors were delicious, and I made it with homemade pumpkin purée that I strained until thick. I used a bit less purée than the recipe called for since it wasn’t as thick as canned. Satisfying yet light, a perfect comfort meal.
This was so much work but absolutely worth the effort! I will definitely make it again for a special occasion.
I made my own pumpkin pure and ended up needing so much more flour that the gnocchi tasted jus like thick noodles....

This recipe was a personal challenge. It was a lot of work, but came out delicious. I did find that I had to add a lot of extra flour to the dough because it was so sticky.

I was a bit worried because I used smoked tofu and soy sauce (instead of miso) for the ricotta but it was delicious 🤤.

Oh I couldnt find Miso paste and didnt have garlic or spinach at home, but turned out very tasty anyway.
Is there anything you can use instead of white miso paste? I have found this to be very hard to find

DELICIOUS! The combo of flavors is superb. Definitely will be making frequently, especially since I was able to freeze half the dough. My meat-loving fiancée raved about how tasty it was!
Again, flavours and combinations where spot on. I thought the gnocchi was rather stodgy, this could have been me, as I have never made this before. The mushroom sauce was superb. I roasted the pumpkin to get a stronger flavour, however didn’t really came through.
