  1. Divide the ingredients between the breads to make sandwiches. That’s it - enjoy!

What a great sandwich! I think this is a case where less is more when you are adding the veggies, as it would be easy to overfill it. Everything works so well together though, so don't skip on anything! A super filling and fresh meal!

I did have a bit of trouble keeping everything on my GF bread, so I was a mess while eating this... but worth it! Trying to figure out a way to solve this minor issue so that it will be a sandwich I can eat on the go, with a friend, or at work/school. The taste was SOOO GOOD!😀

One of my go-to sandwich recipes! I tend to switch around the veggies (bell peppers, various greens and herbs, beets, purple cabbage or radicchio, plain and pickled carrots, tomatoes, etc.) and sauces, but the hummus, cucumbers, avocado, and pickled jalapenos and/or olives are the essential ingredients for me!

Hi. There is a link under the ingredients that says buy ingredients on amazon fresh... But they didn't look like the same products you use in your pictures. The sweet chili sauce for example, the first 3 ingredients are: water, sugar, wheat. There are 19 ingredients total in the sauce, which seems very highly processed to me. I was wondering if you, a nutritionist, have vetted the products you are recommending people to purchase and that you support people eating these on a regular basis?

Also, what sweet chili sauce do you, personally, use?

If it helps in the interim, the sweet chili sauce we tend to use is a house brand from our local grocery store, and the first 3 ingredients are similar with water, sugar, and paprika. I see. Thanks for explaining. That's interesting that your chili sauce actually has the sweet and the chili as 2 of the 3 first ingredients. Sounds like it and the rest of the food you eat personally all taste and are better than the Amazon options/ethics.

We didn't have all the ingredients, but we really enjoyed using hummus as a condiment on a sandwich (we added a little mustard, too - the avocado wasn't ripe enough). My hubby is considering going vegan or at least meat free, so this was his first sandwich that didn't have meat and cheese and he loved it so much we had it again the next day! :D (plus to use up the ingredients, lol)

Really delicious! I used homemade hummus, lettuce instead of spinach, black olives instead of green, pickled red onions instead of raw onions, and I also added some sliced red bell peppers. I forgot the carrots and omitted the sweet chili sauce. Thanks for the quick lunch idea!

A family favorite and our go to sandwich when traveling. When in a hurry this is a great meal to fill you up fast. More often than not I have Greek olives instead of green olives......either type of olives keeps this sandwich delicious.
