I feel like the measurements for the ingredients and the instructions were off or at least not easily replicable. I measured everything exactly but after simmering the rice for 10 minutes all the water was gone so I had to add more to simmer for another 5 minutes. When I added the coconut Milk it was super liquid and there was no way the rice was going to absorb all that liquid, so I had to bring it to a boil again and simmer for at least another 5 minutes. The amount of spices wasn't even noticeable so I put in another half top of cinnamon and double the amount of the other spices. I also added 1/4 top of salt which brought everything together and let it sit covered after adding the coconut oil so the rice can absorb the coconut milk more. Now it's delicious after tweaking the recipe. I used frozen mangoe for the compote because I had that on hand. I pureed them after simmering, turned out delicious

Thanks for sharing your experience, Sarah! Cooking times can sometimes vary depending on the type of rice or stovetop. Once the rice has absorbed the water, you can add the coconut milk and other ingredients. At that point, you may find that no additional water or simmering time is needed. Letting the rice sit covered for a few minutes off the heat is indeed a great way to help it absorb more liquid! Glad you found a spice balance that worked for you, and the mango compote sounds like a delicious twist 🙂

In my case, the rice turned out undercooked, even though I followed the instructions. Maybe if you're making one serving, you should increase water to rice ratio in step one (add more water).

Hey Alexandra! Thanks for your feedback, and sorry to hear the rice turned out undercooked. Cooking times can sometimes vary depending on the type of rice or stovetop. If you’re making a smaller portion, increasing the water-to-rice ratio in step one could definitely help. Another tip is to leave the rice covered with a lid for about 5 minutes after taking it off the heat to allow it to soften through to the center of the grain. So, my 18 month old is teething and has been refusing to eat. He was very apprehensive for the first bite, but once he tasted it his eyes lit up and he couldn’t get enough. I don’t know how else to put it, he giggled with glee the whole time I fed him and I couldn’t be more thrilled. Super easy and delicious, surprisingly fresh and cozy at the same time!

Hey Maria, yes, you can definitely use leftover rice! For the original recipe, you could use 2 - 2.5 cups of cooked rice and skip step 1. We would suggest using 1.5 - 1.75 cups of coconut milk, depending on the consistency you like best. If you think it's too much coconut milk, boil it a bit longer to cook it off or add some chia seeds to help thicken it. Let us know how it goes if you experiment with it 🤗

Thanks for your advice, I am eating it now! Very comfy recipe. I only had one cup of rice and added 3/4 cups of coconut milk (plus an extra sip later on, after I'd waited too long to start serving 🤭). Also, I only had fresh blueberries but the compote turned out just great with a tbsp of water. No sugar needed! The rice is tasty but the real star for me is the compote - such an amazing solution to making something like jam without having to add sugar! I'll be trying that with all kinds of different fruits next 😍

You guys, I just need to tell you, this compote has turned into an obsession 🤭 I'm now making this with all kinds of frozen fruit plus some vanilla/date sirup and extra chia seeds for a more jam-like consistency and, boy, how happy I am to have (sugar free) peanut butter and jam sandwiches again!
