Sandra Pfeifer - March 31, 2025, 2:11 p.m.

Very easy and still delicious.

Loes IJmker - March 9, 2025, 11:30 a.m.

making a double batch as we speak! its lovely I recommend toasting it and eating it with butter. It does need a bit of butter😘

Mihaela Hildebrandt - March 8, 2025, 8:23 a.m.

I’ve made it yesterday. The taste was very good but the texture was super wet and it felt like not baked. But reading comments below it’s seems I did the same mistake by using a backing form that was too high. Indeed, I’ve used one that was rather high. But my husband and even our friend who visited yesterday have enjoyed it very much 💪 🥰

Lynn - Feb. 23, 2025, 9:42 p.m.

5 star
I have made this twice now .
I freeze half the loaf for later . Very Delicious, moist , dessert.
I like raisins so next time I may add raisins .
Excellent directions, easy to make !

Yayy it means so much to hear this, Lynn! Thank you 🥰

Luisa - Jan. 31, 2025, 11:11 p.m.

I Made it tonight and it is amazing! Super comforting 😊

Leanne - Jan. 23, 2025, 7:10 p.m.

I’m not sure what happened but my loaf did not cook on the inside. I tried cooking for another 35 mins in total and it still ain’t cooked. Very delicious still.

PUL small logo PUL Team - Jan. 24, 2025, 5:13 p.m.

Oh no, we're sorry to hear that, Leanne! It might be worth checking your oven temperature or ensuring the loaf pan isn’t too deep. Using a scale to weigh the dry ingredients would also help prevent a heavy batter. Glad it still tasted delicious 🙂

Motlatji Mjamba - March 1, 2025, 6:08 a.m.

I made this about 2 weeks ago. My batter was the same. I'll try those suggestions you recommended, PUL. But agreed that the taste was delicious!

Tessa - Jan. 21, 2025, 2:59 p.m.

So quick and easy to make. Not too sweet. I added in chia seeds and pumpkin seeds for extra texture and protein.

Celina - Nov. 1, 2024, 5:14 p.m.

Such a delicious fall recipe!

Adelaine Gelain - Oct. 27, 2024, 10:37 a.m.

I made it with a mix of gluten-free flour and a bit more water and worked pretty well.

CINDI SATTERSTROM - Oct. 27, 2024, 5:19 a.m.

This is really good and not overly sweet like so many banana breads. I really love the little hint of cloves that comes through.

Lucky - Sept. 12, 2024, 9:58 p.m.

An amazing variation of classical banana bread. Quite moist but I think that’s how it should be and it tastes really good. Also I wouldn’t think of adding the chia seeds for extra protein and also as a substitute for eggs! What a great idea:)) thx for the recipe!
P.S. even my mom liked it and she usually doesn’t like banana breads;D

PUL small logo PUL Team - Sept. 13, 2024, 11:06 p.m.

So happy to hear that the carrot banana loaf recipe was enjoyed, Lucky, thank you 🤗

Nicole Mostofa - June 25, 2024, 10:12 p.m.

I added another 3/4 of a banana because my mix was too dry. Maybe that's why it needed more bake time. Maybe less or no sugar with the extra banana would be better. 🥕🍌

Lula Cerbino - June 13, 2024, 11:29 p.m.

OMG! Just delicious! Just added some chocolate Chips for extra goodness! Loved it!

Steve Elliott - June 8, 2024, 12:36 p.m.

Unusually as I have a fan assisted oven when I bade the usual 20° deduction from the cooking heat in the recipe it hardly cooked at all. I turned the heat back up to your numbers for 1/2 the recipe cooking time and it came out perfect.
The cake itself is .... Oh my....
Yumm yumm 😁

michaela - April 26, 2024, 8:49 p.m.

i dont know, the dough was very dry. It take me a long time to fold the dry ingredients into the wet. and the bread also turns out a little dry too.
what is the fault? i used the cup measurment for the flour and that are 15 g more. i tested it after the cake was ready. maybe that was the problem?

PUL small logo PUL Team - April 29, 2024, 7:52 a.m.

Hey Michaela, we're sad to hear this! Baking is a bit of a science, so in case you use cup measurements for the flour instead of weighing, it can help to ensure that the flour isn't too packed in the cup, but rather, gently spooned into the measuring cup and levelled. Overmixing can also lead to a dense texture. Folding the dry ingredients in until just combined rather than mixing in a circular motion can help avoid this. In our experience, cutting the loaf while it's too warm will lead to a slightly gummy texture, which improves if the loaf is left to cool.

Michaela - April 29, 2024, 8:59 a.m.

thanks for your aswer! i can't fold the dough because it was sooo dry. i fold and fold and fold and it was very hard.
But i will give it another try. maybe my bananas were too small...
wish a lovely day!🤗

Anon - April 4, 2024, 6:36 p.m.

2nd time making this and it’s good for my toddler too. Couple of adjustments: the nuts on top burned in my oven last time I made it, so now I put them all in the mix. Also, I didn’t put any sugar inside, just sprinkled about 1Tbsp on top to make a sweet crispy topping.

PUL small logo PUL Team - April 5, 2024, 1:19 a.m.

Thanks for sharing your experience with the recipe, friend! So glad the loaf was enjoyed 😊

Ada Moisescu - March 28, 2024, 10:13 a.m.

I’m not sure it I overmixed it as well (although I really tried not to!) as the others are pointing out but indeed it came out really dense, small and not fluffy at all. Very different than the other recipe of Chocolate Banana bread which I did a night before and came out perfect.
A bit disappointed. Can be something in the recipe that makes it too dense?

PUL small logo PUL Team - March 29, 2024, 10:12 p.m.

Hi Ada, aw we're sad to hear that the loaf didn't turn out as expected. Using too many carrots or bananas could have contributed to the dense texture. Three bananas should yield one cup of mashed banana. Measuring the dry ingredients using a kitchen scale, if you have it, could also help as it yields more accurate results. I hope this helps!

Kristy - March 11, 2024, 12:05 a.m.

Delicious! Perfect level of sweetness, everyone loved it.

Louise Magnusson - March 10, 2024, 4:40 p.m.

I am still amazed how mashed banana can make any type of bread so moist, even better than bread with eggs/milk/butter. This bread has a very nice twist with spices and carrot: a different earthy sweetness

PUL small logo PUL Team - March 10, 2024, 6:09 p.m.

Isn't the banana incredible, Louise?! So glad you're enjoying the carrot loaf :)

Jelena - Feb. 24, 2024, 9:47 p.m.

Super delicious! I used gluten free flour and swapped sugar with honey, it turned out great!

Lea-Mariel - Feb. 22, 2024, 11:40 a.m.

I turned the batter into 12 muffins and they were amazing! It’s not too sweet and paired well with nut butter and yogurt :) I baked them for 25-30min :)

PUL small logo PUL Team - Feb. 23, 2024, 12:57 a.m.

Oo thanks for sharing your experience with the recipe, Lea-Mariel! Muffins sound lovely 😃

Márcia Marques - Feb. 15, 2024, 2:23 a.m.

Love this recipe!

Alexis Bushnell - Jan. 27, 2024, 5:28 p.m.

Absolutely delicious! I was sceptical about the carrot but you can't taste it. So moist and tasty!

PUL small logo PUL Team - Jan. 29, 2024, 7:30 a.m.

Yayy so glad it was enjoyed, Alexis! 😊

Anna - Jan. 25, 2024, 9:55 p.m.

I made it without coconut oil by mistake, it still turned out great! 😅 it tastes great with butter and a little jelly 😋

Firebolt - Jan. 23, 2024, 12:25 a.m.

Moist and perfect!

Salome V Ingen - Jan. 18, 2024, 11:08 a.m.

When I made it I was a afraid the mixture was too dry but it turned out so good! Instead of 1 loaf I baked them as cupcakes. I also added proteïn powder and didn't add the sugar, still very sweet and flavourfull 😊

PUL small logo PUL Team - Jan. 18, 2024, 5:12 p.m.

Ooo cupcakes are a fun idea! Thanks a bunch for sharing your experience with the recipe, Salome V Ingen 😃

The Witch's Tale - Jan. 15, 2024, 9:31 p.m.

Very moist and delicious loaf! Best thing is that the coconut oil does not take over the taste of banana and carrot! The walnuts provide a delicious crunch!

luni - Jan. 3, 2024, 10:08 p.m.

Hi, I am currently waiting on my bananas to be more ripe and then I will try this recipe. Does anyone have experience with freezing this? It’s to much for me alone

PUL small logo PUL Team - Jan. 4, 2024, 1:44 a.m.

Hey Luni! You can store cut slices separated by parchment paper in the freezer for up to 1 month. We hope you love the Carrot Banana Loaf 😃

Lis - Nov. 19, 2023, 1:50 a.m.

I’m not sure if I need to squeeze out the carrot beforehand or if maybe I needed to add more baking powder but the bread came out more dense than spongy. I’m going to try the recipe again but that was disappointing.

PUL small logo PUL Team - Nov. 21, 2023, 1:23 a.m.

Hey Lis, thanks for sharing your experience with it. Excessive mixing of the batter can also lead to a dense texture. This is because overmixing promotes more gluten to develop which creates a tougher and gummy-like texture. It can be suuuper tempting to mix more, but we recommend only mixing the ingredients until just combined for best results. Hope this helps for now 🤗

Emily King - Nov. 1, 2023, 2:02 a.m.

This is such a yummy banana bread & I love the addition of the carrot!

Gisela Jungermann - Oct. 31, 2023, 11:34 a.m.

made it with apples instead of bananas and it turned out just perfect 🍎🥕

PUL small logo PUL Team - Oct. 31, 2023, 6:24 p.m.

Mmm a delicious idea for fall, Gisela!

Tulika Agarwal - Oct. 31, 2023, 11:01 a.m.

Made this today for my 1.5 year old toddler! I substituted all-purpose flour with whole meal spelt flour and sugar with dates powder to make it more nutritious for the little one . She absolutely loved it ! :) :)
Dear Sadia and team- I am constantly on the lookout for healthy finger food recipes for my lil’ one - Is there any chance that you could do a series on healthy finger food for toddlers ? :)

PUL small logo PUL Team - Oct. 31, 2023, 6:21 p.m.

Hey there, Tulika, aw we're so happy that the carrot banana loaf was enjoyed with the substitutions. We love the idea of exploring more finger foods and have noted down the idea 🥰 in the meantime, your little one might like our banana tahini muffins (https://www.pickuplimes.com/r…) or our orange apricot bliss balls (https://www.pickuplimes.com/r…) 🤗

maral - Oct. 26, 2023, 3:44 p.m.

Hi! Can I make it without chia seeds?

PUL Team - Oct. 26, 2023, 7:16 p.m.

Hey Maral, the ground chia seeds in water make a gel that acts like glue, which helps the loaf stick together. You could substitute the ground chia seeds for another ground seed, such as flax seeds, but we wouldn't recommend omitting the seeds altogether.

If you're up for experimenting though, you could play around with other ingredients that act as a binder, such as mashed banana or a commercial egg replacer in place of the ground seeds but we're not confident how well they'll work. They'll likely impact the taste as they're generally sweeter. We hope you enjoy the loaf if you're able to give it a try 🤗

Amrita - Sept. 23, 2023, 9:51 p.m.

Made this today and it turned out super well ! Used Raisins instead of the nuts and my little one loved it too ❤️

Miryam Vieyra - Sept. 8, 2023, 2:51 a.m.

Can l replace the flour with oat flour?

PUL small logo PUL Team - Sept. 8, 2023, 3:50 p.m.

Hey Miryam, we haven't tested it out so we can't say with certainty. All-purpose flour has gluten in it, which helps give the loaf a fluffier texture and structure. Oat flour might not offer this, but it could be a fun one to experiment with 😃 and if you do, please let us know how it goes!

Katharina Smets - Aug. 25, 2023, 5:24 a.m.

Hi! I think I overmixed the batter because it came out too dense. It rose and then completely fell again. Any tips?

PUL small logo PUL Team - Aug. 26, 2023, 3:53 a.m.

Hey Katharina, oh shoot! Overmixing can indeed lead to a dense texture. Folding the dry ingredients in until just combined rather than mixing in a circular motion can help avoid this 😊

Katharina Smets - Aug. 26, 2023, 10:40 a.m.

Thank you for your response!

Alicia - Aug. 11, 2023, 6:51 p.m.

Delicious! Turned out great! Had to use pecans instead

Natasha - Aug. 9, 2023, 2 p.m.

PUL small logo PUL Team - Aug. 10, 2023, 5:56 p.m.

Delicious banana loaf!

Bunny422MM - July 3, 2023, 4:27 a.m.

I would make this again.
A little on the doughy side.. even though I baked it a good while longer than instructed. We are keeping leftovers refrigerated.

AMAZING!
All kitchen smells so so good and the taste is great 💚

Petra Leine - June 21, 2023, 9:22 p.m.

Nina - May 7, 2023, 7:41 p.m.

This is super good and moist. My new therapeutic recipe <3

Sally T - April 23, 2023, 10:57 p.m.

Really recommend this loaf, it’s easy to make and just a bit different from your standard banana bread. I used pecans instead of walnuts (because that’s what I had in) and they really worked well. I also didn’t have any all purpose flour (or plain flour as we call it in the UK) so I used self raising flour and half the baking powder and that worked just fine

PUL small logo PUL Team - April 24, 2023, 4:54 a.m.

Thank you so much for sharing your experience with the recipe, Sally, we're so thrilled to hear 🤗

Carli - April 4, 2023, 5:12 p.m.
