Hey Aishwarya, we haven't tested it out, but vegan margarine should work as well if that's accessible. Alternatively, a solid refined coconut oil that doesn't impart a coconut taste could work. The cupcakes may end up a bit more crumbly if using coconut oil though. Happy baking πŸ€—

My first vegan baking recipe and I was really pleased with the results! Next time I will sift the icing sugar to remove lumps and try self raising flour instead of having baking soda and powder (I felt I could taste the soda).

Hey Mariska! To achieve the icing look seen in the picture, we used a piping bag fitted with a nozzle. Begin piping from the center and spiral outwards for a neat finish. I hope you enjoy the recipe if you give it a try!
