Hi. Can I substitute granulated sugar with brown sugar?

Hey Joanna, yes, we imagine you can substitute granulated sugar with brown sugar in this recipe. It may add a slight caramel-like flavour and extra moisture, which could make the cake a bit denser. If you'd like to keep the texture light, you could use half-granulated and half-brown sugar perhaps 🤗

Hi, this looks delicious, but I am wondering if you could provide any suggestions/alternatives for the frosting. I can’t seem to find it in any recipes on the app as the frosting always requires a lot of powdered sugar. Is there any possibility to replace it with something “healthier” or is less sugary? Or could I cut down the amount by half?

Hi Grace! Great question 😊 You can absolutely enjoy the cake without the frosting - it’s delicious on its own! If you’d like to keep some frosting, though, you could scale the recipe down by half rather than just reducing the powdered sugar. This ensures the frosting maintains its structure, as powdered sugar not only adds sweetness but also gives the frosting stability.

I’m not sure if i have explored all the bits of app but i feel like having a video of any recipe prep is important. Having a look on how the dessert/ any recepie looks like at various stages is crucial.

Hey Rubbina! The coconut oil helps the cake stay firm since it's solid at room temperature. You could try substituting the coconut oil with a combination of vegetable oil and melted vegan butter or margarine. If you just use a liquid oil, the cake will likely become more crumbly. And if you just use melted butter, the cake will get dry more quickly. Let us know if you experiment with any substitutions 🙂

I would like to make this cake, looks delicious and the feedback sounds great. Is the sheet pan you have to use the metal/stane less steal pan that comes with your oven? Or do you use a special big shallow tin you can buy in a shop? Thank you!

Hey Lien, we use a 14 x 9 inch (35 x 22 cm) cake pan from our local baking store. The stainless steel sheet pan that comes with ovens will be too shallow. We hope this helps for now, and you enjoy the cake if you give it a try 🙂

Love this cake! Made it a couple of times now, it’s super easy, and it works with frozen blueberries too. I just tossed the berries with flour and layered them with the batter, so they didn’t bleed into the mix.

I made this yesterday for my husband’s birthday and we loved this recipe! I didn’t have powdered sugar so I used whip cream on top instead and topped with sliced strawberries and blackberries. I will definitely be making this again when I have family/ friends over! :)

I did this recipe but used oat milk (I didn’t read the disclaimer about using milks with high protein content) and did the frosting with mascarpone and oh my it was fantastic! Super moist and fluffy, everyone loved it!!

Hi ! Did you just used mascarpone for the frosting or did you replace the mascarpone by the butter and then added the sugar powder and the lemon juice ? :)

Incredibly moist, the best cake recipe I’ve ever tried! I replaced blueberries with a triple quantity rhubarb and some walnuts. Didn’t have any frosting either, just some brown sugar on top 🥰
