Delicious and inexpensive. Topped it with mushrooms. Spinach and roasted cabbage. It was delicious.

I loved this! So simple and calming. I'm a big fan of dishes that are more mellow in flavor, my system doesn't handle strong spices very well, so this is perfect and it still has enough flavor to not be bland. I might use the base as a staple and just try to add different veggies to change it up.
Also looove the consistency/texture! I only want dishes that feel like that in the mouth haha

Yes the toppings are essential! I did fry some onion and celery before adding all the ingredients in to boil.
My toppings were bokchoy.

Do you think this would work in a rice cooker if I were to cook the lentils separately and add them at the end?

Hey Phillipa, we imagine that should work! Cooking the lentils separately and adding them at the end is a great idea, especially if you want to use a rice cooker. Just make sure to adjust the water as needed for the rice cooker to get the right consistency 🤗

It worked really well and tasted so good. I added fresh chilli as one of the toppings, spring onion and the suggested ones. It was so tasty.
I initially used half the water for the rice cooker and then added another quarter in when I added the lentils in. The consistency was exactly like the photos.
