Roasted Garlic, Potato & Arugula Pizza

Directions
- Preheat the oven to 350°F (180°C)*. Place the pizza crust on a baking tray and lightly coat with oil.
- Place the roasted garlic onto the crust and mash it using the back of a fork, distributing it evenly over the crust.
- To ensure the potatoes cook as quickly as the crust, slice them very thinly and evenly. Then layer them over the garlicky crust.
- Sprinkle the thyme and salt over the pizza.
- Bake on the centre rack of the oven for 13 - 15 minutes, or until the crust is golden and the potatoes are cooked through.
- Meanwhile, combine the sauce ingredients in a small bowl.
- Top the baked pizza with arugula, sun-dried tomatoes, olives, and pine nuts. Drizzle over the sauce, and enjoy!
Notes
- We used top and bottom heating (not fan-assisted/convection).
Storage
- Best enjoyed fresh out of the oven.
- Store leftovers in the fridge for up to 1 day.

This recipe was lovely. I didn't think the ingredients would be good on a pizza due to what we are all told should go on a pizza, but WOW!!
This was so good! Instead of the tahini sauce I made chipotle mayo. Will definitely make this pizza again.
Really nice, especially the dressing was fantastic! I think I would try to add a little more potato next time, I could not really taste it :) I accidentally bought Tarte (Flammkuchen) dough instead of pizza dough, also worked out nice!!
