Ingredients

Beetroot pesto

  • ½ cup (68 g)
    raw pine nuts
  • ¼ cup (6 g)
    fresh basil
  • 2 Tbsp (30 mL)
    extra virgin olive oil
  • 1
    garlic clove
  • ½
    lemon, juiced
  • ⅛ tsp
    salt

Pizza assembly

  • 16 oz (440 g)
  • 1
    small red onion, thinly sliced
  • ½
    cooked beet, sliced, cut into heart shapes
  • 1 cup (150 g)
    cherry tomatoes, halved
  • 2 tsp (10 mL)
    olive oil
  • 1 cup (20 g)
    arugula
  • 1.4 oz (40 g)
    vegan feta, crumbled
  • ¼ cup (44 g)
    pomegranate seeds

Directions

  1. Toast the pine nuts in a medium pan over medium-high heat until lightly golden, about 3 - 5 minutes, stirring continuously. Then transfer to a food processor.
  2. Add the remaining ingredients for the beetroot pesto to the food processor and blend until smooth. Set it aside.
  3. Line two baking trays with parchment paper and preheat the oven to 390°F (200°C)*.
  4. Roll the pizza dough into 10-inch (25 cm) circles, then shape them into hearts. Transfer them to the baking trays.
  5. Top the dough with the beetroot pesto, onion and beet slices, and tomatoes.
  6. Brush the edges of the pizza with some oil and bake for 15 - 18 minutes, or until the edges are golden.
  7. Finish with arugula, feta, and pomegranate seeds. Enjoy!

Notes

  • * We used top and bottom heating (not fan-assisted/convection).

Storage

  • The pizza is best when enjoyed immediately after baking.
  • Store leftovers in the fridge for up to 1 day.
